  Mix those crumbs with 1/2 cup of melted butter, 1/4 tsp cinnamon (this is where it’s needed, not steak, Frank!) and 1/4 cup sugar. Press the crust mixture into the bottom and sides of a 10 inch springform pan.

  Filling— Remember these all need to be room temperature. You need 1 cup of sugar, 2 1/2 tsps vanilla, 3 eggs, 3–8 ounce packages of regular, plain cream cheese, and one cup regular sour cream. (by regular I mean the full-fat versions)

  Mix the cream cheese and sugar until well-blended. Add the vanilla and sour cream and blend together until smooth. Then, switching your blender to low speed, add the eggs and continue to stir until lightly blended.

  Pour into your crust and place in oven.

  Bake for approximately one hour, ten minutes. About 20 minutes into it, shield your crust with a pie crust shield or tin foil.

  You can serve it with canned cherry pie filling, lemon curd, or strawberry sauce on the side. Yum!
