Beat the egg yolks and powdered sugar together until the mixture is thick, then place in a double boiler (where the water is simmering underneath) and continue beating the yolk mixture constantly until the mixture is foamy (approximately 3 minutes). Remove from the double boiler and continue whisking the mixture over a bowl of ice water for another 3 minutes. Set aside.

  Melt the chocolate over a double boiler, remove from heat, and beat in the butter until the mixture is creamy. Pour the chocolate mixture over the egg mixture. Mix well and then add the vanilla.

  Beat 1 cup of the heavy cream until stiff peaks form and then fold into the chocolate mixture until combined. Divide into serving dishes and chill at least two hours.

  Beat the remaining cup of cream with the ¼ cup of sugar until stiff peaks form. Garnish the mousse with the whipped cream and shaved chocolate (optional).
