That was it. I was happy again. Ready to discover new adventures, eager for them, even. Ready to be vulnerable and open again.
There was a point in this journey when someone could have told me this would have happened. I would have never believed them. Yet it was true.
I was grateful for life.
The front door opened with a bang. A hearty voice called out. “Hey, Grandma, where’s Georgie?”
It was Frank.
My treasure.
Life was good.

Want A Pizza Me
Pizza crust— make an hour before you want to eat.
1 package (1/4 ounce) active dry yeast (note—this is different than instant yeast. If using that, follow the packages directions)
1 teaspoon sugar
1-1/2 cups warm water (110° to 115°)
3 Tbs canola oil
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour
1/4 cup Cornmeal to dust pan
Toppings— Add or omit what you want.
1 pound ground Italian sausage— browned
1 can (15 ounces) of tomato sauce
2 tsp oregano
1 tsp basil
1/2 tsp garlic powder
1 jar artichoke hearts drained and chopped
1 medium green pepper, diced
3 cups shredded mozzarella cheese
2 cups spinach, chopped
1 cup mushrooms thinly sliced
1/2 small onion thinly sliced and separated into rings.
1 can sliced olives
Brown sausage until cooked. Drain.
In the mixing bowl, add warm water and sprinkle yeast on top. Wait five minutes.
Add flour, salt, sugar, and olive oil and mix on low speed for a full minute.
After this the dough needs to be kneaded. You can use the dough hook on your mixer, or place the dough on a well floured surface and knead for eight minutes.
The dough shouldn’t be too sticky. If it is, dust with a bit of flour and continue kneading.
At the end of the eight minutes, the dough needs to rest and rise. Place it in a greased bowl (greased with either olive oil or butter). Turn the dough over so the grease gets on all sides. Cover and let it rise in a warm place for an hour.
Divide dough into two parts. Sprinkle your pizza stone with half of the corn meal. With floured hands, press dough onto the pizza stone.
Top with half of the ingredients of your choice, starting with the spaghetti sauce. Add the herbs, vegetables, sausage, and then the cheese.
Bake at 450° for 10-15 minutes or until cheese is melted and crust is golden brown.
YUM!
