  The Filling: Beat together the cream cheese and brown sugar until smooth, about three minutes. Add the pumpkin and mix, then add the eggs one at a time until well incorporated. Add the evaporated milk, maple syrup and bourbon. Mix, then add the spices and salt and beat until everything is smooth and well-combined.

  Pour the filling into the prepared crust and bake until the center is set, about 30 to 35 minutes. Let cool (bars can be served room temperature or chilled.)
