  Chicken Piccata

  4–8 chicken breast cutlets

  ½ cup flour

  ¼ teaspoon salt

  ⅛ teaspoon ground black pepper

  3 tablespoons grated Parmesan cheese

  4 tablespoons extra virgin olive oil

  4 tablespoons butter

  ½ dry white wine (such as a Sauvignon Blanc)

  2 tablespoons lemon juice

  ¼ cup brined capers

  2 tablespoons fresh chopped parsley

  In a shallow bowl, mix together the flour, salt, pepper, and grated parmesan. Then dredge the chicken pieces in the flour mixture, coating both sides.

  In a large skillet, heat olive oil and 2 tablespoons of the butter on medium heat. Add chicken pieces to the pan, but don't crowd it. You can cook the chicken in batches if they don't all fit. Brown the chicken well, heating about 4 minutes on each side. Remove the chicken from the pan and reserve to a plate.

  To the pan add wine, lemon juice, and capers. Simmer, being sure to scrape and incorporate the browned bits from the pan, until the sauce reduces by half. Then whisk in the remaining 2 tablespoons of butter.

  Plate the chicken with the sauce poured over the top and the parsley sprinkled over it.

  Serves 4–6.

  Tips!

  Don't have cutlets on hand? Boneless, skinless chicken breasts will do! Just slice the chicken breast in half horizontally, and butterfly them open. If you're not a wine drinker—or are cooking for non-drinkers—you can substitute chicken stock in place of dry white wine.

  Wine pairings:

  Best served with a mild Pinot Blanc or a citrusy Chardonnay, to complement the richness of the sauce and the zest tang of the lemon. Some of Emmy's suggestions: Press Run Chardonnay, Jess and Jules Chardonnay, Yamhill Pinot Blanc.

  Simple Salmon

  2 (6–8 oz each) salmon filets

  sea salt

  1 lemon, zested

  Preheat oven to 425° degrees.

  Place salmon skin side down on a foil lined baking sheet. Sprinkle with salt and lemon zest. Bake 10–12 minutes.

  That's it! (I did say it was simple, right?)

  Tips!

  140° is the perfect temperature to cook salmon to—note that it's much lower than chicken! If you're using wild salmon, it has less fat and may dry out sooner, so it may require slightly less cooking time.

  Sherry Potatoes

  2 small red onions

  2 pounds small red potatoes

  ¼ cup (1 stick) melted butter

  ¼ cup dry sherry

  sea salt and freshly ground pepper to taste

  3 tablespoons (about 1 bunch) fresh thyme leaves

  Preheat oven to 425°F.

  Scrub the potatoes well and cut in half—or cut in fourths for larger potatoes. Slice the onions into thin strips. Spread potatoes out on a rimmed baking sheet.

  In a small bowl, combine the butter and sherry, and pour over the vegetables. Sprinkle with salt, pepper, and thyme.

  Bake until the edges of the potatoes are golden brown, about 30–40 minutes.

  Wine pairings:

  Salmon is best served with an earthy Pinot Noir or a full bodied white, like an oaky Chardonnay. Some of Emmy's suggestions for this meal: Butter Chardonnay, Dante Pinot Noir, The Dreaming Tree Pinot Noir.
