Place sugar on a
shallow plate. Swirl a lime
slice around lip of large rocks
glass. Dip lip into sugar to frost the rim.
Place layer of ice in glass. Add lime slice and a few fresh strawberry slices. Top with another layer of ice. Add another layer of lime and strawberry slices.
Add one more layer of ice and remaining strawberries.
Set aside.
Place strawberry rum, lime juice, and simple syrup in a cocktail shaker filled two-thirds full of ice. Shake to blend ingredients. Strain into prepared glass.
Top with ginger ale.
It’s always a good idea to keep lots of ice handy when things heat up. Start sipping and stripping the swirled layers of fresh fruit away and enjoy the fizzy, strawberry and citrus flavors of this ice-filled Lollipop drink. How many sips will it take you to finish off a Lollipop?
JOY RIDE
1-1/2 ounce Gold Rum
1/2 ounce Blackberry Brandy
1/2 ounce Créme de Banana
1/2 ounce Pineapple Juice
1/2 ounce Orange Juice
1/4 ounce Dark Rum
Assorted Fruits – optional
Combine gold rum,
brandy and juices in a
cocktail shaker filled two-thirds
full with ice. Shake to blend ingredients.
Strain into a tall glass over fresh ice. Garnish with
fruit if desired. Float dark rum on top.
A Joy Ride is a fairly easy way to lose track of an afternoon or evening. This drink goes long on tropical flavor. Sip slowly to allow the fruit to marinate in the drink. Share with your partner for a little snack after sipping. It’s delicious that way!
FLAVORED SYRUPS
SIMPLE SYRUP
1 cup Granulated Sugar
1/2 cup Water
1 ounce Vodka – optional
Place granulated sugar and water in a saucepan over low heat. St
ir continuously while sugar melts and mixture heats. Heat until mixture just barely begins to simmer. Remove from heat. Add vodka after mixture cools. Double strain liquid into a glass bottle. Seal with lid.
Refrigerate.
This is the simple syrup recipe I refer to anytime “simple syrup” is referenced in a drink recipe. This recipe is sometimes called rich simple syrup because it is two parts sugar to one part water. I use this formula because I feel it is closest in comparison to commercial simple syrup or bar syrup. Some mixologists use equal parts sugar to water; others use one part water to one and a half parts sugar.
Vodka acts as a preservative to extend the shelf life of simple syrup. Simple syrup can stay fresh for several months if kept sealed and refrigerated while not in use.
BROWN SUGAR SYRUP
1 cup Brown Sugar
1/2 cup Water
1 ounce Vodka – optional
Place packed brown sugar and water in saucepan over low heat. Stir continuously until mixture barely begins to simmer. Remove from heat. Allow to cool. Add vodka for longer shelf life. Strain through a small mesh strainer into a glass container with lid. Store in a sealed container in the refrigerator.
MIXOLOGY
TOOLS AND TECHNIQUES
Preparation and attention to detail is the best way to ensure a delicious drink. This is the basic mixology information you need to prepare the recipes in Cocktails with a Tryst.
BAR TOOLS
The recipes in this book are written so a minimum number of tools are needed.
Standard Three-Piece Shaker
Jigger or Measurer with ¼, ½, 1, and 2 ounce markings
Muddler
Citrus Juicer
Fine Mesh Strainer
Barspoon or Teaspoon
Knives – thin paring knife, serrated knife, larger chef ’s knife
Blender
Corkscrew
Cutting Board
Measuring Cups – ¼, 1/3, ½, 1 cup
Vegetable Peeler – optional
Shallow plate or saucer
Saucepan
Glass jar or container with lid
STANDARD SHAKER
Every recipe in this book uses a standard three-piece shaker for ease of use. The three parts include:
A flat based bottom mixing cup
A top with built in strainer
A cap
This type of standard shaker is available at most general retail stores where kitchen and bar tools are sold. Look for one in stainless steel with at least 16 ounce capacity. This accommodates mixing two cocktails at the same time.
SHAKE
To use the standard shaker, place liquids in the mixing cup. Add ice as directed. Place the top and cap firmly on the top of the mixing cup. Shake vigorously for approximately 15 seconds with one hand on the bottom of the mixing cup and one hand or fingertips on the shaker cap. After shaking, take off the cap; invert the shaker and strain over the cocktail glass while keeping a finger or two on the top. A vigorous 15 second shake should sufficiently chill a cocktail and integrate all the ingredients. No one likes a lukewarm drink.
MEASURE
A classic jigger is two sided with a one and a half ounce measurement on one side and a half ounce measurement on the other. I prefer a measuring device with ¼, ½, 1, and 2 ounce measurements clearly marked on it. Measuring each ingredient keeps a well-balanced drink.
Each recipe in this book has been tested according to the specified measurements. Balancing each ingredient within a cocktail is key to making a satisfying drink time after time. Making a drink without measuring (this is called free-pouring) can be highly inaccurate.
The first time you make drinks in this book I recommend making the recipes according to measurement directions. When tasting the drink for the first time, take a moment to notice if there are any changes you would make to make the drink more pleasing to your palate. Do not hesitate to write in the book, so next time you make the drink it will be perfect for your palate! The proper way to make a drink is the way you will enjoy it most.
MUDDLE
A muddler is similar to a pestle, used to crush and grind. A cocktail muddler is used more for bruising herbs and spices and lightly pressing fruits to release the essential oils from their skins and extract juices. A good muddler should be 8 to 10 inches long and made of natural hardwood. Avoid lacquered or varnished muddlers. To use a muddler, press down and twist rather than bash at the herbs, spices and fruits.
Traditionally, recipes call for muddling in a mixing glass or in the rocks glass the drink will be served in. For ease of preparation use the standard shaker mixing cup for all recipes in this book that call for muddling.
CITRUS JUICER
Hand-held juicers come in a variety of sizes. I recommend purchasing a larger juicer to accommodate larger citrus fruits. Cut fruits in half or in quarters to fit the hand juicer as needed.
Use a citrus juicer to extract fresh citrus juice at the time you are preparing a drink. The juice will be the freshest possible and you will capture the essential aromatic oils from the rind.
DOUBLE STRAIN AND FINE STRAIN
Double straining and fine straining removes small shards of ice or fruit pulp that slips through a standard cocktail strainer and mars a drink’s appearance. To double strain or fine strain, simply hold a fine mesh strainer between the cocktail shaker and the glass when straining the liquid.
RIM
An ordinary shallow plate or saucer is sufficient to rim a cocktail glass.
Use a sliced piece of citrus fruit to wet the outside rim of a glass. Roll the edge of the outside rim in a shallow plate of the designated garnish such as sugar, salt, chocolate, etc. When making cocktails for guests, it is a good idea to only rim half of the glass leaving the other half clean. This gives the guest the option of rim or no rim.
TWIST OR ZEST GARNISH
Twisting a fruit peel over a cocktail releases the essential oils of the peel into the drink. This adds another layer of flavor to the drink. A twist or zest can be cut using a thin knife or vegetable peeler. Cut a strip of fruit peel approximately one half inch wide and two to three inches long. The twist or zest should be thin, leaving just barely any white pith on the underside. Hold the peel over the glass with the colored peel side down. Twist the peel and watch as the essential oils zest over the surface of the drink. Lightly circle the rim of the cocktail glass with the colored side of the peel before dropping the twist into the drink.
BARSPOON
The bartender’s barspoon has a long, twisted handle for easily stirring drinks. The spoon is approximately one teaspoon measurement. The barspoon can also be used for layering shots. It is an inexpensive tool to keep in your bar cabinet, but not crucial. A long handled tea spoon will do the trick if available.
GLASSWARE AND GARNISH GUIDE
Each recipe contains an exact photo representation of the authentic drink. Look to the photo as a guide if needed. Use the type of glassware suggested or be creative and choose your own! There is no wrong or right. The idea is to mix up some fun.
