  PER SERVING (entire quesadilla): 175 calories, 4.5g fat, 1,026mg sodium, 26.5g carbs, 12.5g fiber, 7g sugars, 18.5g protein

  A bacon, lettuce, and tomato quesadilla?! We’ll stop at nothing to bring you the most creative and satisfying mini meals!

  Ingredients

  1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla

  2 tablespoons fat-free shredded cheese (mozzarella or cheddar)

  2 slices extra-lean turkey bacon

  ½ plum tomato (preferably Roma), diced

  ½ cup shredded lettuce

  1 tablespoon fat-free mayonnaise

  1 tablespoon ketchup

  Directions

  Cook bacon according to package directions, either in the microwave or in a pan sprayed with nonstick spray. Once cool enough to handle, roughly chop and set aside.

  Bring a pan sprayed with nonstick spray to medium heat. Lay tortilla flat in the pan. Top evenly with cheese.

  Once cheese begins to melt, cover half of the tortilla with bacon and tomato. Using a spatula, carefully fold the cheese-only side over the other half, pressing down with the spatula to seal. Cook for about 1 minute.

  Flip and continue cooking for about 1 minute, or until both sides are toasty. Remove from heat.

  To make the sauce, combine mayo and ketchup in a small dish. Cut quesadilla into triangles, top with the shredded lettuce and serve with sauce on the side.

  We took our famous Buffalo Chicken Choppity Chop (find that recipe in the salad chapter of the first HG book) and stuffed it inside a tortilla. Yeah, we’re cool like that.

  Ingredients

  1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla

  2½ ounces cooked skinless lean chicken breast, chopped

  ½ cup shredded lettuce

  2½ teaspoons Frank’s RedHot Original Cayenne Pepper Sauce

  2 teaspoons reduced-fat Parmesan-style grated topping

  1½ teaspoons fat-free sour cream

  Directions

  Place chicken pieces in a small microwave-safe dish. Top with hot sauce and Parm-style topping, and stir until chicken is thoroughly coated. Microwave for 45 seconds, or until hot.

  Microwave tortilla until slightly warm. Lay tortilla flat and spread sour cream down the center. Place lettuce in the center of the tortilla, and top with chicken mixture.

  Wrap tortilla up by folding in the sides first, and then rolling it up tightly from the bottom.

  Ahhhhhhhh! This guilt-free white pizza is so good, you will SCREAM when you take a bite. AHHHHHHHHHHHHH!

  Ingredients

  1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla

  1/3 cup fat-free ricotta cheese

  ¼ cup thinly sliced onions

  1 tablespoon shredded fat-free mozzarella cheese

  6 basil leaves

  4 thin slices plum tomato (Romas rock)

  ¼ teaspoon garlic powder

  1/8 teaspoon plus 1 dash salt

  Dash black pepper

  Directions

  Preheat oven to 375 degrees.

  Place tortilla on a baking sheet sprayed lightly with nonstick spray. Bake in the oven for 5 to 6 minutes on each side, until slightly crispy. Leave oven on.

  In a small bowl, mix ricotta cheese, mozzarella cheese, garlic powder, 1/8 teaspoon salt, and black pepper. Set aside.

  Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onions and, stirring occasionally, cook until softened and slightly browned, about 3 minutes. Immediately stir onions into cheese mixture.

  Spread cheese-onion mixture evenly on top of the tortilla. Place basil leaves on cheese-onion mixture. Top with tomato slices, and then sprinkle with a dash of salt.

  Return pizza to the oven and bake for about 5 minutes, or until entire pizza is hot. Use a pizza cutter or a sharp knife to cut into slices. Pizza for one!

  Ingredients

  1/3 cup canned diced tomatoes with green chilies, drained

  1/3 cup frozen ground-beef-style soy crumbles, thawed

  2 tablespoons shredded fat-free cheddar cheese

  2 tablespoons shredded fat-free mozzarella cheese

  ½ teaspoon dry taco seasoning mix

  1 tablespoon fat-free sour cream

  Directions

  Preheat oven to 375 degrees.

  Bring a medium-large pan sprayed lightly with nonstick spray to medium heat on the stove. Cook tortilla in the pan for a few minutes on each side until slightly firm.

  Transfer tortilla to a baking sheet sprayed with nonstick spray. Spread tomatoes with chilies evenly over tortilla, leaving about 1 inch of space around the perimeter.

  In a small dish, combine taco seasoning mix with soy crumbles. Evenly distribute seasoned crumbles over the tomatoes with chilies. Sprinkle both cheeses over the “meat” layer.

  Bake in the oven for about 13 minutes, until tortilla edges have browned and cheese has melted. Plate it up, top with sour cream, and dig in!

  Ingredients

  1 wedge The Laughing Cow Light Original Swiss cheese

  3 tablespoons shredded fat-free mozzarella cheese

  ¼ cup canned tomato sauce with Italian seasonings

  4 slices turkey pepperoni, chopped

  2 tablespoons chopped green bell pepper

  2 tablespoons chopped onion

  2 tablespoons chopped mushrooms

  Directions

  Preheat oven to 350 degrees.

  Warm tortilla in the microwave for 10 seconds. Lay tortilla flat and spread cheese wedge down the center.

  In a medium bowl, combine all of the veggies with the tomato sauce until well mixed. Place this mixture on top of the spread cheese wedge in the center of the tortilla.

  Sprinkle pepperoni on top of the veggie mixture. Top with the shredded cheese.

  Wrap tortilla up by folding in the sides first, and then rolling it up tightly from the bottom.

  Spray a baking sheet lightly with nonstick spray. Place your wrap on the sheet, seam side down. Bake in the oven for 10 to 15 minutes, or until tortilla is slightly browned.

  Part burger. Part Mexican tortilla treat. Anything and EVERYTHING can be turned into a quesadilla these days. This recipe is proof.

  Ingredients

  1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla

  1 Boca Original Meatless Burger, thawed

  1 slice fat-free American cheese, chopped

  1 tablespoon chopped onion

  1 tablespoon chopped pickles

  Optional ingredients: salt, black pepper, garlic powder

  Optional topping: ketchup

  Directions

  Preheat oven to 350 degrees.

  Cut burger into small bite-sized pieces. Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and burger pieces. Cook for 2 to 3 minutes, until onion is soft. Season mixture to taste with optional ingredients, if you like.

  Spray a medium-large baking sheet lightly with nonstick spray. Lay tortilla flat on the sheet and evenly top with the cheese pieces. Bake in the oven for about 2 minutes, until cheese has melted slightly. Leave oven on.

  Spread burger mixture over one half of the tortilla. Top with pickles and fold tortilla in half, pressing down lightly with a spatula to seal.

  Bake in the oven for another 3 to 5 minutes, until tortilla edges are slightly brown.

  Remove from the oven and cut into triangles. Top or serve with ketchup, if you like. Yum!

  Denny’s Beer Barrel Pub in Clearfield, Pennsylvania, is touted as having “possibly the world’s largest hamburgers.” The menu features the 15-pound Belly Buster, the Belly Bruiser (50+pounds), and the Main Event Burger (a.k.a. the Charity Burger)—that thing weighs in at more than 100 pounds. Yikes!

  This taco salad is soooooo adorable. It’s like a mini version of one you’d get at a restaurant…complete with a crunchy taco shell and all the delicious toppings!

  Ingredients

  1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortilla

  1½ cups shredded lettuce

  1/3 cup frozen ground-beef-style soy crumbles

  2 tablespoons shredded fat-free cheddar cheese

  ½ teaspoon dry taco seasoning mix

  2 tablespoons salsa

  1 tablespoon fat-free sour cream

  Directions

  Preheat oven to 425 degrees.

  Spray a small round casserole dish (about 6 inches in diameter) with nonstick spray. Gently push tortilla into the dish, so that the sides of the tortilla fold in and rest along the sides of the dish. The tortilla should take on a bowl or “shell” shape.

  Bake tortilla bowl in the oven for 10 to 12 minutes, until crispy. Set aside until cool.

  Place soy crumbles in small microwave-safe dish and cover with taco seasoning mix. Microwave for 30 seconds, then stir well. Microwave for an additional 10 to 20 seconds, until hot.

  Fill the tortilla “shell” with lettuce and top with seasoned soy crumbles. Sprinkle cheese on top. Finish with salsa and sour cream. Dig in!

  Directions

  In a tall glass, combine powdered creamer, coffee granules, and sweetener with ¼ cup hot water. Stir until ingredients have dissolved. Add ½ cup cold water and stir.

  Transfer coffee mixture to a blender with soymilk and ice. Mix at low to medium speed until shake is just blended, but not liquefied. Pour into your glass and slurp it up!

  2 tablespoons sugar-free calorie-free vanilla syrup

  1 teaspoon Coffee-mate Sugar Free French
Vanilla powdered creamer

  ¼ teaspoon vanilla extract

  2 no-calorie sweetener packets

  ¾ cup crushed ice or 4 to 6 ice cubes

  Optional topping: Fat Free Reddi-wip

  Directions

  In a small bowl or glass, dissolve powdered creamer in 1 tablespoon warm water. Transfer to a blender.

  Add all of the other ingredients to the blender and blend until your ideal consistency is reached.

  Pour your shake into a glass. Top it off with some Reddi-wip, if you like.
