For the sauce:
3 tablespoons basil leaves, chopped
½ cup parsley leaves, chopped
Zest from 1 lemon
2 garlic cloves, finely chopped
A pinch of sea salt
Black pepper to the taste
¼ cup extra virgin olive oil
Directions:
In a bowl, mix mustard with vinegar, stir very well and leave aside.
Season beef with a pinch of sea salt and pepper to the taste put in a pan heated with the coconut oil over medium-high heat and cook fro 2 minutes on each side.
Transfer beef to a baking pan, cover with the mustard mix, introduce in the oven at 475 degrees F and bake for 25 minutes.
Meanwhile, in a bowl, mix parsley with basil, lemon zest, garlic, olive oil, a pinch of sea salt, and pepper to the taste and whisk very well.
Take beef tenderloin out if the oven, leave aside for a few minutes to cool down, slice and divide between plates.
Serve with herbs sauce on the side.

Ingredients:
10 ounces mushrooms, sliced
10 ounces asparagus, sliced
1 and ½ pounds beef steak, thinly sliced
2 tablespoons honey
1/3 cup coconut amino
2 teaspoons apple cider vinegar
½ teaspoon ginger, minced
6 garlic cloves, minced
1 chili, sliced
1 tablespoon coconut oil
Black pepper to the taste
Directions:
In a bowl, mix garlic with coconut amino, honey, ginger and vinegar and whisk well.
Put some water in a pan, heat up over medium high heat, add asparagus and black pepper, cook for 3 minutes, transfer to a bowl filled with ice water, drain and leave aside.
Heat up a pan with the oil over medium-high heat, add mushrooms, cook for 2 minutes on each side, transfer to a bowl and also leave aside.
Heat up the same pan over high heat, add meat, brown for a few minutes and mix with chili pepper.
Cook for 2 more minutes and mix with asparagus, mushrooms and vinegar sauce you’ve made at the beginning.
Stir well, cook for 3 minutes, take off heat, divide between plates and serve.

3 pounds organic pork shoulder

1 teaspoon paprika

Directions:
In a bowl, mix chili powder with onion and garlic one.
Add cumin, paprika and pepper to the taste and stir everything.
Add pork, rub well and keep in the fridge for 12 hours.
Transfer pork to your slow cooker, add enchilada sauce, stock, salsa and green chilies, stir, cover and cook on Low for 8 hours.
Transfer pork to a plate, leave aside to cool down and shred.
Strain sauce from slow cooker into a pan, bring to a boil over medium heat and simmer for 8 minutes stirring all the time.
Add shredded pork to the sauce, stir, reduce heat to medium and cook for 20 more minutes.
Divide between plates and serve hot.

2 sausages, casings removed
A handful arugula

1 grass fed pork tenderloin
1 tablespoon coconut oil
For the puree:
1 sweet potato, chopped
3 carrots, chopped
A pinch of sea salt

1 tablespoon curry paste
For the sauce:
2 tablespoons balsamic vinegar
1 teaspoon mustard
2 shallots, finely chopped
Black pepper to the taste
4 tablespoons extra virgin olive oil
Directions:
Slice pork tenderloin in half horizontally but not all the way and open it up.
Use a meat tenderizer to even it up.
Place sausage in the middle, roll pork around it, tie with twine, season pepper to the taste and leave aside.
Heat up an oven proof pan with the coconut oil over medium high heat, add pork roll, cook for 3 minutes on each side, introduce in the oven at 350 degrees F and bake for 25 minutes.
Meanwhile, put potatoes and carrots in a pot, add water to cover, bring to a boil over medium high heat, cook for 20 minutes, drain and transfer to your food processor.
Pulse a few times until you obtain a puree, add a pinch of sea salt and pepper to the taste, blend again, transfer to a bowl and leave aside.
Take pork roll out of the oven, slice and divide between plates.
Heat up a pan with the olive oil over medium high heat, add shallots, stir and cook for 10 minutes.
Add balsamic vinegar, mustard, pepper, stir well and take off heat.
Divide carrots puree next to pork slices, drizzle vinegar sauce on to and serve with arugula on the side.

4 pounds pork tenderloin

Add vinegar and half of the strawberries, stir and bring to a boil.
Reduce heat to medium and simmer for 10 minutes.
Add black pepper to the taste and the rest of the strawberries and stir.
Baste pork with some of the sauce and continue cooking over indirect heat until bacon is crispy enough.
Transfer pork to a cutting board, leave aside for a few minutes to cool down, slice and divide between plates.
Serve with the strawberry sauce right away.

Heat up the pan again over medium high heat, add sweet potatoes, cook them for 4 minutes and add them to the baking dish.
Also add bell peppers, tomatoes, onion, olives and lemon slices.
