  Pumpkin Custard

  It’s the perfect Paleo dessert for a cold winter day!

  Preparation time: 10 minutes

  Cooking time: 1 hour

  Servings: 6

  Ingredients:

  1 and ½ cups pumpkin puree

  2/3 cup maple syrup

  1 cup coconut milk

  2 tablespoons chia seeds ground and mixed with 5 tablespoons water

  1 tablespoon baking powder

  2 teaspoons pumpkin pie spice

  A pinch of salt

  1 teaspoon cinnamon

  ½ teaspoon vanilla

  Pumpkin seeds for serving

  Directions:

  In a bowl, mix pumpkin puree with coconut milk, maple syrup, chia seeds mixed with water, baking powder, pumpkin pie spice, a pinch of salt, cinnamon and vanilla and stir well using your kitchen mixer.

  Pour this into small ramekins, arrange them on a baking tray filled half way with hot water, place in the oven at 325 degrees F and bake for 1 hour.

  Take custards out of the oven, leave them to cool down and serve with pumpkin seeds on top.

  Berry And Cashew Cake

  It’s smooth and delicious!

  Preparation time: 5 hours and 10 minutes

  Cooking time: 0 minutes

  Servings: 6

  Ingredients:

  For the crust:

  ½ cup dates, pitted

  1 tablespoon water

  ½ teaspoon vanilla

  ½ cup almonds

  For the cake:

  2 and ½ cups cashews, soaked for 8 hours

  1 cup blueberries

  ¾ cup maple syrup

  1 tablespoon coconut oil

  Directions:

  In your food processor, mix dates with water, vanilla and almonds and pulse well.

  Transfer dough to a working surface and flatten it.

  Arrange into a lined round pan and leave aside for now.

  In your blender, mix maple syrup with coconut oil, cashews and blueberries and blend well.

  Spread evenly on the crust, introduce cake in the freezer for 5 hours, leave at room temperature for 15 minutes, then cut and serve it.

  Fruit Jelly

  Preparation time: 10 minutes

  Servings: 2

  Ingredients:

  1 pounds grapefruit jelly

  ½ pound coconut cream

  A handful fresh berries for serving

  A handful nuts, roughly chopped for serving

  Directions:

  In your food processor, combine grapefruit jelly with coconut cream and blend very well.

  Add berries and nuts, toss gently, transfer to dessert cups and serve right away!

  Almond And Fig Dessert

  This is one of the easiest winter Paleo desserts ever!

  Preparation time: 10 minutes

  Cooking time: 5 minutes

  Servings: 4

  Ingredients:

  2 tablespoons coconut butter

  12 figs cut in halves

  ¼ cup maple syrup

  1 cup almonds, toasted and chopped

  Directions:

  Heat up a pot with the butter over medium high heat and stir until it melts.

  Add maple syrup and figs, stir well and cook for about 5 minutes.

  Add almonds, stir gently and take off heat.

  Transfer to dessert bowls and serve right away!

  Great Tomato Cake

  It’s something really different and new!

  Preparation time: 10 minutes

  Cooking time: 30 minutes

  Servings: 4

  Ingredients:

  1 and ½ cups coconut flour

  1 teaspoon cinnamon

  1 teaspoon baking powder

  1 teaspoon baking soda

  ¾ cup maple syrup

  1 cup tomatoes chopped

  ½ cup extra virgin olive oil

  2 tablespoon apple cider vinegar

  Directions:

  In a bowl, mix flour with baking powder, baking soda, cinnamon and maple syrup and stir well.

  In another bowl, mix tomatoes with olive oil and vinegar and stir well.

  Combine the 2 mixtures, stir well and pour everything into a greased round pan.

  Introduce cake in the oven at 375 degrees F and bake for 30 minutes.

  Take cake out of the oven, leave aside to cool down, transfer to a platter, cut and serve it.

  Green Apple Smoothie

  This green smoothie is perfect for the cold season!

  Preparation time: 10 minutes

  Cooking time: 0 minutes

  Servings: 3

  Ingredients:

  1 big green apple, cored and cut into medium cubes

  1 cup baby spinach

  1 tablespoon pure maple syrup

  A pinch of cardamom

  ½ teaspoon cinnamon

  ½ teaspoon vanilla extract

  Directions:

  Put apple cubes in your food processor.

  Add spinach, maple syrup, vanilla extract, cardamom and cinnamon and blend until you obtain a smooth cream.

  Pour into 2 glasses and serve right away!

  Grapefruit Granita

  It’s a wonderful dessert idea for you and all your friends!

  Preparation time: 4 hours and 20 minutes

  Cooking time: 0 minutes

  Servings: 6

  Ingredients:

  1 cup water

  1 cup maple syrup

  ½ cup mint, chopped

  64 ounces red grapefruit juice

  Mint leaves for serving

  Directions:

  Put 1 cup water in a pan, bring to a boil, add maple syrup, stir and take off heat.

  Add mint, cover and leave aside for 5 minutes.

  Strain into a plastic container, discard mint, add grapefruit juice, cover, place in the freezer for 4 hours.

  Take out of the freezer 15 minutes before you scrape with a fork and serve with mint leaves on top.

  Enjoy!

  Mango Granita

  It’s a tropical dessert!

  Preparation time: 6 hours

  Cooking time: 10 minutes

  Servings: 6

  Ingredients:

  4 cups mango, peeled and cubed

  2 tablespoons lime juice

  6 tablespoons maple syrup

  A pinch of salt

  A pinch of ground red pepper

  Directions:

  Put mango, lime juice, maple syrup, salt and red pepper in a pan, bring to a boil, stir, reduce heat to low and simmer for 10 minutes.

  Remove from heat, leave aside for 10 minutes, pour into your food processor, pulse a few times, strain into a bowl, discard solids, pour into a baking dish, place in the freezer and keep there for 6 hours scraping every hour.

  Scrape with a fork after 6 hours and serve!

  Delicious Cherry Sorbet

  It’s different from any sorbets you had before!

  Preparation time: 2 hours and 20 minutes

  Cooking time: 0 minutes

  Servings: 7

  Ingredients:

  ½ cup dark cocoa powder

/>   ¾ cup Paleo red cherry jam

  ¼ cup maple syrup

  2 cups water

  For the compote:

  2 tablespoons stevia

  1 pound cherries, pitted and cut in halves

  Directions:

  In a pan, mix cherry jam with cocoa and maple syrup, stir, bring to a boil, gradually add the water, stir again, remove from heat, leave aside to cool down completely.

  Whisk this sorbet again, pour in a casserole and keep in the freezer for 1 hour.

  For the compote, mix in a bowl, stevia with cherries, toss to coat and leave aside for 1 hour.

  When the time has passed, serve this compote with the sorbet.

  Fruits Mix And Vinaigrette

  It’s such a pleasure to share with you this amazing dessert idea!

  Preparation time: 5 minutes

  Cooking time: 15 minutes

  Servings: 4

  Ingredients:

  2 tablespoons lemon juice

  1 and ½ tablespoons maple syrup

  1 and ½ tablespoons champagne vinegar

  1 tablespoon olive oil

  1 pound strawberries, halved

  1 and ½ cups blueberries

  ¼ cup basil leaves, torn

  Directions:

  In a pot, mix lemon juice with maple syrup and vinegar, bring to a boil at a medium high temperature, simmer for 15 minutes, add oil, stir and leave aside for 2 minutes.

  In a bowl, mix blueberries with strawberries and lemon vinaigrette, toss to coat, sprinkle basil on top and serve!

  Simple Passion Fruit Pudding

  It’s such a pleasure to teach you how to make this amazing Paleo dessert!

  Preparation time: 10 minutes

  Cooking time: 55 minutes

  Servings: 6

  Ingredients:

  1 cup Paleo passion fruit curd

  4 passion fruits, pulp and seeds

  3 and ½ ounces maple syrup

  3 eggs

  2 ounces ghee, melted

  3 and ½ ounces almond milk

  ½ cup almond flour

  ½ teaspoon baking powder

  Directions:

  Put half of the passion fruit curd in a bowl and leave aside.

  In another bowl, mix the rest of the curd with passion fruit seeds and pulp and stir.

  Divide this into 6 teacups.

  In a bowl, whisk eggs with maple syrup, ghee, the reserved curd, baking powder, milk and flour and stir well.

  Divide this into the 6 cups as well, put them in an oven pan, fill the pan halfway with water, place in the oven at 200 degrees F and bake for 50 minutes.

  Take puddings out of the oven, leave aside to cool down and serve!

  Summer Carrot Cake

  It looks so beautiful and it tastes wonderful!

  Preparation time: 3 hours and 15 minutes

  Cooking time: 0 minutes

  Servings: 6

  Ingredients:

  For the cashew frosting:

  2 tablespoons lemon juice

  2 cups cashews, soaked

  2 tablespoons coconut oil, melted

  1/3 cup maple syrup

  Water

  For the cake:

  1 cup pineapple, dried and chopped

  2 carrots, chopped

  1 and ½ cups coconut flour

  1 cup dates, pitted

  ½ cup dry coconut

  ½ teaspoon cinnamon

  Directions:

  In your blender, mix cashews with lemon juice, coconut oil, maple syrup and some apple, pulse very well, transfer to a bowl and leave aside for now.

  Put carrots in your food processor and pulse them a few times.

  Add flour, dates, pineapple, coconut and cinnamon and pulse very well again.

  Pour half of this mix into a springform pan and spread evenly.

  Add 1/3 of the frosting and also spread.

  Add the rest of the cake mix and the rest of the frosting.

  Place in the freezer and keep until it’s hard enough.

  Cut and serve.

  Carrot Cupcakes

  We adore these cupcakes!

  Preparation time: 1 hour and 10 minutes

  Cooking time: 0 minutes

  Servings: 6

  Ingredients:

  1 cup almonds

  2 cups carrot pulp

  1 cup dates, chopped

  ½ teaspoon ginger, grated

  1 teaspoon cinnamon powder

  A pinch of nutmeg

  ¾ cup raisins

  For the frosting:

  1 cup cashews, soaked for 1 hour and drained

  A splash of water

  1 teaspoon lemon juice

  6 dates, pitted, soaked for 1 hour and drained

  Directions:

  In your food processor, mix 1 cup walnuts with 1 cup dates, carrot pulp, 1 teaspoon cinnamon, ginger, a pinch of nutmeg and the raisins and blend very well.

  Divide this between cupcakes tins and push it well.

  Clean your food processor, add 1 cup cashews, 6 dates, a splash of water and the lemon juice and blend these as well.

  Divide the frosting on the cupcakes, introduce them in the fridge and keep there for 1 hour.

  Enjoy!

  Special Cupcakes

  These will be done in no time and they are really great!

  Preparation time: 1 hour and 10 minutes

  Cooking time: 0 minutes

  Servings: 6

  Ingredients:

  16 ounces mulberries, dried

  1 teaspoon cinnamon, ground

  16 ounces dates, pitted and chopped

  3 ounces almond butter

  3 ounces raw beet juice powder

  3 ounces spirulina powder

  8 ounces coconut water

  1 and ½ cups raw cashews

  Directions:

  In your food processor, mix mulberries with dates, cinnamon and butter and blend very well.

  Scoop this mix into a cupcake pan and leave aside.

  Clean your food processor, mix spirulina powder with half of the cashews and half of the coconut water, blend well, transfer to a bowl and leave aside.

  Clean your blender again, add beet powder with the rest of the cashews and the coconut water and pulse well.

  Decorate half of the cupcakes with the beets frosting and the other half with the spirulina powder one.

  Keep cupcakes in the fridge for 1 hour and serve them.
