2. Fill paper-lined muffin cups one-third full with batter. Drop filling by teaspoonfuls into the center of each cupcake. Cover with remaining batter.
3. Bake 15-20 minutes or until a toothpick inserted in brownie portion comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust the tops with confectioners’ sugar. Store in the refrigerator.
BROWNIE AFFOGATO SUNDAES
We can’t resist brownies and ice cream. We also love coffee and espresso, so I combined an affogato (a coffee-based dessert) with a brownie to get this sundae. Cold, sweet and salty—sensational. This is one recipe to pass along!

1/2 cup heavy whipping cream
1/4 cup marshmallow creme
6 prepared brownies
6 tablespoons fudge ice cream topping
2 cups coffee ice cream
3/4 cup hot brewed espresso
6 tablespoons Kahlua (coffee liqueur), optional
Chocolate-covered coffee beans
Sea salt or smoked salt
1. In a small bowl, beat whipping cream and marshmallow creme until soft peaks form. Refrigerate until serving.
2. To serve, place each brownie in a dessert dish; top with fudge topping and ice cream. Pour espresso and, if desired, Kahlua over ice cream. Top with cream mixture and coffee beans; sprinkle with salt. Serve desserts immediately.
BROWNIE ICE CREAM CONES
My husband is in the Air Force, so we’ve moved around a lot. I’ve been fortunate to make new friends in each place we’ve been stationed. When they share their interesting recipes, I like to put my own twist on them. Here’s one—serving these fun treats to kids is a sure way to create friendships anywhere!

4 ounces German sweet chocolate, chopped
1/4 cup butter, cubed
3/4 cup sugar
2 large eggs
1/2 cup all-purpose flour
1/2 cup chopped walnuts, optional
1 teaspoon vanilla extract
24 ice cream cake cones (about 3 inches tall)
24 scoops ice cream
Colored sprinkles
1. In a microwave, melt chocolate and butter; stir until smooth. Cool slightly; pour into a large bowl. Add sugar and eggs until well blended. Stir in the flour, walnuts if desired and vanilla.
2. Place the ice cream cones in muffin cups; fill half full with batter. Bake at 350° for 20-22 minutes or until brownies are set on top and a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool completely.
3. Just before serving, top each cone with a scoop of ice cream and garnish with sprinkles.
BANANA SPLIT BROWNIE CAKE
Brownies, ice cream, bananas, hot fudge, nuts—everything we love about a banana split is beautifully layered into what may be the most awesome cake ever.

2 packages (13 ounces each) fudge brownies
1 quart strawberry ice cream, softened
3 large firm bananas, halved lengthwise
1 cup hot fudge ice cream topping, warmed
1 quart vanilla ice cream, softened
3/4 cup chopped pecans
1. Arrange brownies in a greased 9-in. springform pan, cutting to fit and filling in small holes. Spread with strawberry ice cream. Cover and freeze for 3 hours or until firm.
2. Arrange bananas over ice cream, cutting to fit as needed. Spread with fudge topping and vanilla ice cream. Sprinkle with pecans. Cover tightly and freeze overnight. (May be frozen for up to 2 months.)
3. Remove cake from the freezer 10 minutes before serving. Carefully run a knife around the edge of the pan to loosen; remove sides of pan.
NOTE This recipe was prepared with Little Debbie fudge brownies.
TOP TIP
SOFTEN ICE CREAM
If your ice cream is too hard to scoop, put the entire container in the microwave on high for 15-20 seconds. It’ll soften just enough to make it easy to scoop.

1/2 cup butter, softened
3/4 cup sugar
2 large eggs
2 tablespoons corn syrup
1 1/2 teaspoons almond extract
2/3 cup all-purpose flour
1/3 cup baking cocoa
1/4 teaspoon baking powder
1/3 cup chopped maraschino cherries
1/3 cup coarsely chopped almonds
1 cup white baking chips
Whipped topping and maraschino cherries with stems, optional
1. In a small bowl, cream butter and sugar. Add the eggs, corn syrup and extract; mix well. Combine the flour, cocoa and baking powder. Add to creamed mixture and mix well. Drain chopped cherries on paper towels. Fold the cherries, almonds and chips into batter.
2. Transfer mixture to a greased and floured 9-in. pie plate. Bake at 325° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. If desired, garnish with whipped topping and cherries.
