  CRUSTLESS MINI QUICHE

  Makes: 12

  Preparation time: 15 MINUTES

  Cooking time: 15 MINUTES

  Ingredients

  •6 eggs

  •3 tablespoons milk

  •1/2 teaspoon herbs (chives, parsley, dill, marjoram, etc.)

  •salt and pepper to taste

  •1/2 cup chopped bacon (alternatively you can use am or shredded chicken, or a mix of those)

  •1 cup grated cheese of your choice

  •optional additions: you can add any favourite vegetables, finely chopped, e.g. capsicum, tomato, spring onions, broccoli, grated carrot, corn etc (Josephine used spring onions and corn)

  Instructions

  Preheat oven to 180C (355 F).

  Prepare a muffin tray.

  Fry the bacon to your preference, adding chopped vegetables, if using and set aside.

  Whisk well eggs and milk.

  Add the herbs and season with salt and pepper.

  Add the cheese, bacon and other ingredients to the egg and milk mix and combine.

  Spoon into the prepared muffin tray

  Bake for 15-18 minutes until they spring back to the touch.

  Cool in the muffin tray and carefully remove.
