  Once your dough has risen, follow Brandon’s instructions: slice the dough into sixteen equal pieces, roll them into balls, then flatten them. The middle needs to be a little thicker, since it’ll become the “top”. Put a few tablespoons of filling onto the circle (it’s easiest if you hold it in your palm for this), then crimp the edges together to make a little “purse” of dough. Place it seam-side down on your parchment-lined baking sheet, and let them rise another hour. Meanwhile, preheat your oven to 400 degrees Farenheit.

  After they’ve risen, brush with egg wash and sprinkle with sesame seeds (or, you know…don’t. Whatever) and pop them in the oven. Immediately turn the oven down from 400 to 350 (I don’t know why you had to heat it so high in the first place. I’m not a scientist. I just follow directions!) and bake for about 25 minutes, or until golden-brown. Pull ‘em out, brush them with sugar water, and let them sit for a few minutes so you don’t burn the top of your mouth when you bite into them!
