Chocolate Glazed Donuts with Sprinkles
Ingredients:
Donuts:
1 cup milk
1/3 cup granulated sugar
1 packet active dry yeast
3 tablespoons butter
1/2 teaspoon salt
2 egg yolks at room temperature
2 1/2 cups bread flour plus extra for rolling
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
Vegetable oil for frying
Glaze:
4 ounces semi-sweet chocolate
1 cup confectioners’ sugar
2 tablespoons milk plus extra to thin the glaze if necessary
1 teaspoon vanilla extract
Sprinkles for decorating
Preparation:
Prepare a baking tray by oiling it and set aside. Line another baking tray with paper towels and set aside.
Heat the milk until warm. Put the warm milk, sugar and yeast in a bowl and leave aside until the mixture starts frothing. This should take about 10 - 15 minutes.
Melt the butter and leave aside to cool.
Add the butter, salt, egg yolks, flour, nutmeg and vanilla extract to the milk and yeast mixture and mix until combined.
With lightly floured hands knead the dough on a floured surface until smooth.
Place the dough in an oiled bowl and cover with plastic wrap.
Leave in a warm place for about an hour until almost doubled in size.
On a floured surface punch back the dough then knead until smooth.
Using a floured rolling pin roll the dough to about half an inch thick and then using a donut cutter cut out the donuts.
Take the off-cuts and roll out again and cut. It should make about 12 donut holes and donuts. Place the donuts on the oiled baking tray.
Cover with plastic wrap and leave in a warm area for about 30 minutes until almost doubled in size.
Using a deep fryer or Dutch oven heat the oil to 350 degrees Fahrenheit. Use a deep-fry thermometer to check the temperature if using a Dutch oven.
Fry the donuts and donut holes in batches. Fry for about a minute on each side until golden brown. Put the donuts on the paper lined baking tray and cool slightly.
For the glaze melt the chocolate preferably in a double boiler.
When the chocolate is melted add the confectioners’ sugar, milk and vanilla extract and whisk vigorously until well combined.
If the mixture is too thick gradually add a bit more milk until it is the right consistency.
When it is at the right consistency leave it aside to cool slightly.
Dip the tops of the donuts into the glaze, then dip them into the sprinkles.
Leave on a plate to set.
