“Perfect,” Cindy said as she beamed at Jason. “This is absolutely perfect. I can’t believe you’re still here. It’s like fate.”
“Fate,” Jason repeated.
Fate, Lacy decided, needed a big fat fist in the mouth.
Lucinda’s Peanut Butter Cookie Recipe (Adapted from Gourmet magazine)
4 ½ C. All Purpose Flour
1 ½ tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
3 Sticks Unsalted Butter
1 1/3 C. Peanut Butter
2/3 C. Sugar
2/1/4 C. Brown Sugar
1/3 C. Vegetable Oil
3 Whole eggs & 2 Yolks
2 T. Vanilla
1 Bag Reese’s Peanut Butter Chips
Whisk dry ingredients together and set aside. Cream butter, peanut butter, sugars, and vegetable oil until pale and creamy. Add vanilla and then eggs and yolks, one at a time. Add dry ingredients and mix. Add chips. Roll into 1” balls and flatten. Bake at 350 degrees for ten minutes or until golden brown on edges.
*Lucinda’s note: I like to make cookie dough ahead of time and chill overnight before baking.
