  Cream shortening, water and sugar until light and fluffy. Add egg. Beat well. Add flour, soda, and cinnamon to creamed mixture. Beat well. Stir in apples and vanilla. Pour into greased 6.5” by 8.5” pan. Bake at 350 for 35-38 minutes.

  CREAM CHEESE ICING:

  4 ounces cream cheese (room temp)

  1/2 box powdered sugar (4 ounces)

  2 teaspoons vanilla

  Mix together until smooth. Frost cooled cake.

  NOTES: Keep refrigerated. The 6.5” by 8.5” pan that Megan used came with a toaster oven set. An 8x8 square pan should work also. For jumbo cupcakes, bake at 350 degrees for approximately 30 minutes.
