  Add in potatoes and stir to combine.

  Once potatoes are seared from all sides, lower heat and cover. Lift the lid periodically and stir so that potatoes don’t stick.

  When potatoes are cooked, add the sugar and half the chopped cilantro.

  Fry for a couple of minutes until well combined.

  Add lime juice and mix it in.

  Switch off heat and garnish with remaining cilantro.

  Serve as a side with any meal.

  RECIPE - Curried Egg Sandwiches

  Ingredients

  6-8 large eggs, boiled

  ¼ cup celery, diced fine

  ¼ cup red pepper, diced fine

  ¼ cup mayo

  ¼ cup Greek yogurt

  ½ tsp mustard

  ¼ tsp sugar

  ½ tsp curry powder

  1 Tbsp cilantro, chopped (optional)

  Method

  Finely chop boiled eggs and set aside.

  Mix all the other ingredients in a bowl.

  Add chopped eggs and mix until combined. Refrigerate for an hour or two.

  Make sandwiches with this filling, adding lettuce and tomato if desired.

  RECIPE - Sausage Pizza Bites

  Ingredients

  1 cup Italian sausage, crumbled

  1 cup pizza or pasta sauce

  ½ cup chopped onions

  ½ cup chopped peppers

  1-2 cups shredded cheese

  1 Tbsp crushed red pepper

  English muffins, bagels or baguette slices

  Method

  Heat oven at 400F.

  Use half of English muffin or bagel as base for the pizza bites. You can also use baguette slices or bread slices.

  Slather the sauce at the base. Add a layer of cheese. Top with sausage, onions and pepper . Sprinkle some crushed red pepper.

  Bake in the oven until the cheese melts, bread crisps up, and toppings sizzle.

  Serve hot as a snack any time of day or night.
