  Nora’s Mahi Mahi With Pineapple Salsa

  Total Time: 30 Minutes

  Serves: 4

  Ingredients

  4 mahi mahi fillets, 4 ounces each

  1 1/2 cups of diced, fresh pineapple

  1/4 cup of finely chopped green bell pepper

  1/4 cup of finely chopped red bell pepper

  2 tablespoons of finely chopped, fresh cilantro

  2 tablespoons of fresh lime juice

  1 teaspoon of honey

  1/8 teaspoon of apple cider vinegar

  1/2 teaspoon of red pepper flakes

  1/2 teaspoon of lime zest

  1 tablespoon of olive oil

  1/2 teaspoon of freshly ground white pepper

  Nonstick cooking spray

  Directions:

  1. Prepare Pineapple Salsa by combining the pineapple, green pepper, red pepper, cilantro, one tablespoon of lime juice, honey, apple cider vinegar, red pepper flakes and lime zest in a bowl.

  2. PreHeat the broiler.

  3. Rinse the mahi mahi and use paper towels to pat dry.

  4. Spray the rack of a broiler pan with nonstick cooking spray and place the mahi mahi on it.

  4. Mix the remaining one tablespoon of lime juice with the olive oil and brush the mixture onto the top side of the fillet.

  5. Position broiler pan 4 inches from heat and broil for 2 minutes.

  6. Flip the mahi mahi and brush the second side with the lime juice & olive oil mixture. Sprinkle with the white pepper.

  7. Broil for another 2 minutes. Fillet should flake effortlessly with a fork.

  8. Serve with pineapple salsa!

  Nora’s Peanut Butter Bacon Burgers!

  Total Time: 25 Minutes

  Serves: 10

  Ingredients

  5 lbs. Lean Ground Angus Beef (80%/20%)

  8 oz. Applewood Smoked Bacon

  20 Slices Yellow American Cheese

  Creamy Peanut Butter

  3 Cloves Fresh, Minced Garlic

  1 Tbsp Salt

  1 Tbsp Seasoning Salt

  1/2 Tbsp Pepper

  10 Burger Buns

  Directions:

  1. Thoroughly mix the beef, salt, seasoning salt, pepper and garlic.

  2. Divide the mixture into 10 parts and roll into “beef balls”.

  3. Gently press the “beef balls” into patties.

  4. Place the patties on a lined cookie sheet and set aside.

  5. Set your grill to medium-high and while it heats up…

  6. Fry the bacon to your preferred texture.

  7. Once the grill is hot, place the burgers over the heat.

  8. Cook the first side of the burger for 3-5 minutes, until the edges are browned.

  9. Flip and cook for another 3-5 minutes, until just browned.

  10. Remove the burgers from the heat, dress the top of each with bacon & cheese and set them aside for another 3-5 minutes. While the burgers sit…

  12. Dress the top & bottom of each bun with the peanut butter.

  13. Place the burgers on the buns and serve.

  Nora’s Sweet & Spicy Mac & Cheese

  Total Time: 40 minutes

  Prep: 20 minutes

  Cook: 20 minutes

  Serves: 4

  Ingredients:

  4 Cups Elbow Macaroni

  1 Cup Sharp Cheddar Cheese, Grated

  1/2 Cup Pepperjack Cheese, Grated

  1/2 Cup Mozzarella Cheese, Grated

  1/2 Cup Bread Crumbs

  4 Cups Heavy Cream

  1/4 Cup Sweet Chili Sauce

  4-8 Jalapeño Peppers, Diced (depending on your taste)

  1/2 Cup Fresh or Canned Pineapple, Diced

  OPTIONAL:

  Cooked Ham or Sausage, Diced

  Directions:

  1) Preheat the oven to 350 degrees Fahrenheit.

  2) Cook the macaroni to desired consistency.

  3) While the oven preheats & the pasta cooks, reduce the heavy cream by half in a stock pot then stir in the sweet chili sauce.

  4) Transfer to a casserole dish.

  5) Mix in the macaroni, the diced peppers, the pineapple and all three cheeses. If desired, add cooked ham or sausage.

  6) Sprinkle the bread crumbs over the top and bake uncovered for 20 minutes (or until browned).

  7) Serve.

  Nora’s Lovely Lamingtons

  Total Time: 1 day, 55 minutes (with a break thrown in for…1 day!)

  Prep: 25 minutes

  Cook: 30 minutes

  Set: 1 Day

  Serves: 6-8

  Ingredients:

  For The Cake:

  2 Cups All-Purpose Flour

  3/4 Cup White Sugar

  4 Teaspoons Baking Powder

  1/8 Teaspoon Salt

  1/2 Cup Butter

  1/2 Cup Milk

  1 Teaspoon Vanilla Extract

  2 Eggs

  For The Icing:

  4 Cups Confectioners’ Sugar

  1/3 Cup Cocoa Powder

  1/2 Cup Milk

  2 Tablespoons Melted Butter

  1 Pound Unsweetened, Dried Coconut

  Directions:

  1) Preheat the over to 375 degrees F.

  2) Grease & flour an 8 x 12 inch pan

  3) Mix the flour, baking powder & salt and set aside.

  4) Using an electric mixer with a large bowl, beat 1/2 cup butter and 3/4 cup sugar until light & fluffy. Add the eggs and beat them into the mixture. Add in the vanilla and beat. Alternately add in the milk and the flour/baking powder/salt mixture from the last step, mixing until each portion is blended thoroughly.

  5) Pour the batter in the pan and bake 30-40 minutes, until a toothpick inserted into the center comes out clean.

  6) Let the cake stand for 5 minutes then turn onto a wire rack and cool.

  7) Wrap in plastic wrap and let cake sit overnight at room temperature.

  8) For the icing, mix the confectioners’ sugar & cocoa in a large bowl. Add the melted butter & milk and mix well.

  9) Cut the cake into 24 equal squares.

  10) Set a wire rack on a sheet of wax paper on a counter.

  11) Pour the shredded coconut into a shallow bowl.

  12) Dip each square into the icing and coat entirely, roll each square in the coconut and place them onto rack to dry.

  13) Serve & Enjoy!

  Nora’s Crispy Orange Chicken Sandwich

  Total Time: 35-40 minutes

  Serves: 4

  Ingredients:

  For The Chicken:

  4 round buns (sesame seed recommended)

  8 boneless skinless chicken thighs

  1 quart oil (vegetable, peanut or canola) for frying

  2 cups all-purpose flour

  ½ cup whole milk

  ½ cup honey

  ½ cup seasoned rice wine vinegar

  3 tbsp soy sauce

  2 tbsp Sriracha

  2 tbsp water

  1 tbsp fresh, grated ginger

  2 tsp sesame oil

  1 tsp cornstarch

  2 large eggs

  2 minced cloves garlic

  Zest and juice of 1 large orange

  Juice of ½ lemon

  Salt, t
o taste

  Roasted sesame seeds for garnish

  For The Mayo:

  ½ cup mayonnaise

  3 tbsp sambal chile sauce

  1 tsp lemon juice

  ½ tsp sesame oil

  ¼ tsp ground black pepper

  1 finely minced large scallion

  For The Slaw:

  ½ head green cabbage, cored & shredded

  6 red radishes sliced thinly into rounds

  4 scallions thinly sliced diagonally

  2 fresh Serrano chilies thinly sliced crosswise

  1 tbsp seasoned rice wine vinegar

  1 tsp sesame oil

  ¼ tsp salt

  Juice of ½ lemon

  Directions:

  1) Combine all the ingredients for the sambal mayo in a small bowl and stir. Put aside.

  2) Combine all the ingredients for the slaw in a big bowl and toss well. Put aside.

  3) Add oil to a large, heavy-bottomed pot and heat to 350ºF.

  4) Using a large sauté pan, combine honey, orange juice and zest, lemon juice, rice wine vinegar, soy sauce, Sriracha sauce, ginger, garlic & sesame oil.

  5) Heat on high for 5 minutes, stir occasionally. Continue until slightly reduced.

  6) Combine water and cornstarch in a small bowl then stir into the mixture from #4. Reduce for another 2 minutes and remove from heat.

  7) Salt the chicken thighs.

  8) Add milk and eggs to a large mixing bowl and whisk. Add flour to a low-profile bowl. Coat the chicken thighs first with flour then in egg mixture then in flour once again. Add the chicken thighs to the hot oil one at a time and fry for approximately six minutes or until golden brown (internal temp = 175ºF). Remove the thighs from the oil when done and place on a plate lined with paper towels. Repeat for each piece of chicken.

  9) Toss each piece of chicken in the orange sauce until fully coated then garnish with roasted sesame seeds.

  10) Toast the buns. Place two chicken thighs on each bun with a helping of slaw. Coat the top half of each bun with the mayo mixture.

  11) Serve & Enjoy!

  Nora’s Chocolatey Chocolate Cake

  Total Time: 70-75 minutes

  Serves: 12

  Ingredients:

  For The Cake:

  2 cups white sugar

  1 3/4 cup white flour

  1 cup milk

  1 cup boiled water

  3/4 cup cocoa

  1/2 cup vegetable oil

  2 tspns vanilla extract

  1 1/2 tspn baking soda

  1 1/2 tspn baking powder

  1 tspn salt

  2 eggs

  For The Icing:

  3 cups powdered sugar

  1 stick butter

  2/3 cup cocoa

  1/3 cup milk

  1 teaspoon vanilla extract

  Directions:

  1) Preheat oven to 350 degrees F.

  2) Grease & flour a baking pan measuring 13” x 9” x 2”.

  3) Prepare the cake batter by combining sugar, flour, cocoa, baking soda, baking powder & salt in a mixing bowl. Add in the milk, vegetable oil, vanilla extract & eggs and beat with an electric mixer set on medium for two minutes (or until batter is thin).

  4) Pour the prepared batter into the baking pan.

  5) Bake for 35-40 minutes (a toothpick stuck into the center should come out clean once finished).

  6) Cool for 10 minutes.

  7) Transfer to a cooling rack and, while cooling thoroughly, prepare the frosting:

  8) Melt the butter.

  9) Stir in the cocoa, powdered sugar & milk, alternating until frosting reaches the desired consistency, then add the vanilla extract.

  10) Frost the cake

  Nora’s Super-Soft Super-Simple Peanut Butter Cookies

  Total Time: 15-20 minutes

  Serves:

  8-12 cookies, depending on desired cookie size

  Ingredients:

  1 cup of peanut butter, smooth or chunky

  1 cup of white sugar

  1 egg

  Directions:

  1) Preheat your oven to 350 degrees F.

  2) Line a baking sheet with parchment paper.

  3) Mix all 3 ingredients until smooth.

  4) Spoon out the mixture into individual cookies of your desired size.

  5) Bake for 6-8 minutes or until the bottoms are just browning.

  6) Cool.

  7) OPTIONAL: Top with jelly, jam, preserves, chocolate or marshmallow fluff!

  Nora’s Fudgy Caramel Brownies

  Total Time: 25 Minutes

  Yields: 24 Brownies

  Ingredients

  1.5 cups of semi-sweet chocolate chunks

  1.25 cups of all-purpose flour

  1 cup of sugar

  1/2 cup of chopped walnuts

  1 stick of butter

  1 dozen caramel chunks

  3 eggs

  1 tbsp of milk

  1 tsp of vanilla extract

  1/4 tsp of baking soda

  Directions:

  1. Preheat your oven to 350 degrees F.

  2. Grease a 13” by 9” rectangular baking pan.

  3. Place the butter and chocolate chunks into a saucepan and stir over low heat until melted & smooth. Remove from the stove.

  4. Stir in the eggs.

  5. Stir in the sugar, flour, baking soda and vanilla.

  6. Pour the batter into the bake pan and spread evenly.

  7. Disperse the walnuts across the top of the batter.

  8. Bake for 20 minutes.

  9. Combine the milk & caramels in a microwave safe bowl and heat on high power for 1 minute, then stir until the mixture is smooth.

  10. Remove the brownies from the oven and drizzle the caramel mixture over the top.

  11. Cool before cutting into 24 brownies.

  12. Enjoy!

  Nora’s Cheesy Garlic Mashed Potatoes

  Total Time: 30 Minutes

  Serves: 4-6

  Ingredients

  6 Russet potatoes, peeled

  1 Cup of half & half

  3/4 Cup of shredded cheddar cheese, sharp or extra sharp (to taste)

  2 tablespoons of salted butter

  1 teaspoon of minced garlic

  1 teaspoon of salt

  1/2 teaspoon of ground black pepper

  Directions:

  1. Boil your potatoes in a medium-large saucepan until a fork can easily penetrate to the center (usually 10-15 minutes).

  2. Drain the water from the potatoes and mash in a large bowl.

  3. In the saucepan, melt the butter and stir in the garlic.

  4. Cook for 3 minutes.

  5. Add the butter/garlic mixture to the now mashed potatoes and stir thoroughly.

  6. Add the half & half gradually, stirring each addition until thoroughly blended. Once all of the half & half has been added, stir until the potatoes are smooth.

  7. Sprinkle the salt across the top and mix thoroughly.

  8. Repeat with the pepper.

  9. Gradually add in the cheese, allowing each addition to melt before adding more, ensuring a thorough mixture.

  10. Serve & enjoy!

  4 Cups of milk

  1/2 Cup of granulated sugar

  1/4 Cup of baking cocoa

  1/3 Cup of hot water

  1 teaspoon of vanilla

  Pinch of salt

  Whipped cream

  Marshmallows

  Directions:

  1. Add the water, sugar, cocoa and salt to a saucepan and stir, mixing well.

  2. Bring the mixture to a boil and cook for 1-2 minutes, stirring all the while.

  3. Add the milk and heat to just below a boil.

  4. Remove from the heat.

  5. Add vanilla and stir thoroughly.

  6. Add whipped cream and marshmallows as desired.

  7. Serve & enjoy!
