  2 teaspoons sea salt

  1 cup walnut oil

  6 tablespoons water, very cold to almost freezing

  Mix flour and salt with a fork in a medium bowl. Stir in oil until well blended. Add water and knead with hands until absorbed, but no longer. Divide dough in half and roll one half out between waxed paper into a pie-sized round. Carefully place into a 10-inch deep-dish pie plate and trim the edges to about 1 inch from the top of the dish. Reserve the other half of the dough for after the filling is placed into the bottom crust. It's a good idea to cover it with waxed paper or plastic wrap so that it doesn't dry out.

  For the Filling:

  10 medium Granny Smith apples

  ½ cup sugar

  3 tablespoons white flour

  2 teaspoons cinnamon

  2 tablespoons butter (optional)

  Core, skin, and thinly slice apples, either by hand, apple corer, or spiralizer. Place cored apples into a large bowl and add sugar, flour, and cinnamon. Then gently mix, arrange into pie plate over the crust, and dot with butter.

  Roll out the reserved dough, and make 3 slits in it for steam to escape. Place over the apple filling and seal the edges with the under crust by pressing together. Cover pie with aluminum foil, also with slits for steam to escape. Bake 60 minutes at 425ºF. Remove foil and bake for 10 more minutes or until crust is slightly golden brown. Remove from oven and sprinkle with 1 teaspoon of sugar if desired. Cool before slicing. Enjoy with vanilla ice cream or without!

  Tips!

  Sugar may be eliminated for a very tart, appley flavor (Mama Halliday's favorite!) or increased for more sweetness. Simple fingerprints make a nice decorative edging for the crust. Rather than slits, Mama Halliday often likes to cut out designs into her upper piecrust using small cookie cutters. A little heart is nice!

  Wine Pairings

  Best served paired with sweet wines that complement the tart apples, like a Moscato or caramelly tawny port. Some of Emmy's suggestions: Porto Valdouro Tawny Port, Stella Rosa Moscato D'Asti, Primo Amore Moscato Champagne

  Authentic Mole Sauce

  ¼ cup sesame seeds

  5 whole cloves

  1 cinnamon stick

  1 cup chopped white onion

  ½ teaspoon anise seeds

  ¼ teaspoon coriander seeds

  6 dried guajillo chile peppers

  4 dried ancho chile peppers

  6 tablespoons corn or canola oil

  ¼ cup raisins

  ¼ cup whole blanched almonds

  ¼ cup hulled pumpkin seeds

  2 6-inch corn tortillas, torn into pieces

  6 cups chicken broth

  1 2.7-ounce disk Mexican chocolate, broken into pieces

  Pinch of sugar

  Toast the sesame seeds in a dry skillet over medium heat. Toss until golden, about 5 minutes, and then transfer to a blender.

  In the same dry skillet, toast the cloves, cinnamon stick, and anise and coriander seeds until fragrant, about 3 minutes. Add to the blender.

  Remove the stems and seeds from the dried chile peppers. Heat 4 tablespoons oil in the same skillet over medium heat. Add the chiles and fry until lightly toasted and fragrant, about 1–2 minutes. Transfer the chiles to a bowl and cover them with hot water. Set aside to soak until pliable, for about 30 minutes.

  Meanwhile, add the raisins, almonds, pumpkin seeds, and tortilla pieces to the oil in the skillet. Stir continuously and cook until the seeds and tortillas are golden brown. Add to the blender, along with any oil left in the skillet, the softened chiles, and the onion.

  Puree, slowly adding 2 cups of broth to make a thick, smooth sauce.

  Transfer the sauce to a large pot over medium heat. Add in 4 cups of broth and simmer until the sauce starts to thicken, about 20 minutes. Add the chocolate, stirring frequently, and simmer until the chocolate melts and the sauce reduces, about 20 more minutes. Add the sugar and season with salt.

  Add cooked meat to the pot or pour over enchiladas, rice, and any cooked meat!

  Tips!

  There are as many versions of mole as there are ingredients, so don't be afraid to experiment and improve with your own additions. Some versions can be sped up using a pressure cooker or cooking low and slow in a slow cooker.
