  Recipes Made By The Characters

  Love Pancakes

  Recipes by Terra Kelly

  Prep: 10-15 minutes

  Cook: 2 minutes each side (directions below)

  Makes: 12-18 pancakes (4 inch in diameter)

  Ingredients

  2 cups all-purpose flour

  1 Tbsp baking powder

  1 tsp salt

  ¼ cup sugar

  ½ cup salted butter, melted

  2 large egg

  1 ½ cup coconut milk (or favorite milk)

  Optional - Pink Love Pancake batter

  ½ cup batter (you may need 1 cup if you want a big pink heart)

  (optional) 1 Tbsp coconut milk (Add if batter is too thick)

  4 drops red food coloring

  Directions

  Note: You can use a heart shape cookie cutter to get a precise heart shape or just make the shape on your own. If you use a cookie cutter, when it’s time to remove the cookie cutter use tongs because it will be hot.

  In a small saucepan, melt butter and let cool.

  In a small bowl, add flour, baking powder, salt, and sugar.

  In a medium bowl, add melted butter, eggs, and coconut milk. Mix well and then add flour mixture. The batter should be loose, but not runny. If you need to add more coconut milk, just add a small amount at a time until you get a good consistency to pour into your pan.

  Optional- You can add pink hearts in the center of your pancakes. In a small bowl, add ½ cup of the prepared batter. The batter needs to be loose enough for a piping bag. You may need to add 1 or 2 tablespoons of coconut milk. Then add the food coloring and mix well. Add the pink batter to your piping bag and set aside.

  In a saucepan with burner set to medium heat, add small amount of butter or cooking spray. Place heart-shaped cookie cutter and ¼ cup batter to warmed pan. Cook for about two minutes on each side. When it’s time to flip to the second side, the batter will look dull in appearance and you won’t see bubbles popping up anymore.

  Optional pink hearts- If you want to make the love pancakes, you can add the pink batter. Place the heart-shaped cookie cutter in the center of the warmed pan now pipe out a pink heart. Then immediately add the batter on top of the pink heart. Let them cook for two minutes on each side, just like directed up above.

  Top with your favorite topping, and enjoy!

  AKA: Peanut Butter, Toasted Coconut,

  Chocolate Chip Cookies

  Recipe by Terra Kelly

  Prep: 15-20 minutes

  Cook: 10-14 minutes

  Makes: 26 cookies

  Ingredients

  ½ cup salted butter, softened

  ½ cup white granulated sugar

  ½ cup packed brown sugar

  1 cup coconut milk (or favorite milk)

  2 large eggs

  1 tsp vanilla

  2 cups all-purpose flour

  1 tsp baking powder

  1 tsp baking soda

  1 tsp salt

  ¼ tsp nutmeg

  ½ tsp cinnamon

  ½ cup shredded coconut, toasted (directions below)

  ½ cup peanut butter

  1 cup chocolate chips

  ½ cup craisins

  Directions

  Preheat oven to 350 degrees Fahrenheit. Add parchment paper or Silpat to sheet pan, or use cooking spray.

  For toasted coconut: Place parchment paper on sheet pan and add coconut. Bake for 5-10 minutes or until golden brown. Let cool. Note: There is an additional step at the bottom of this recipe. Toast some extra coconut so you have enough for the cookies and the extra step at the bottom.

  In a small bowl, add flour, baking powder, baking soda, salt, nutmeg, and cinnamon.

  In a medium bowl, add softened butter, white sugar, brown sugar, milk, eggs, vanilla, and peanut butter. Mix ingredients together. Then add flour mixture. Make sure batter is mixed well. Now add toasted coconut, chocolate chips, and craisins.

  Add 1-2 tablespoons of batter for each cookie to prepared sheet pan with a scoop. Bake 10-14 minutes depending on oven. The cookies will be golden brown in appearance. (Note: I used a scoop that equaled about two tablespoons and the recipe made 26 cookies.)

  Enjoy one or two…maybe more!

  Optional: You could add a chocolate glaze to the cookie after they’ve cooled. In a small bowl, mix one cup powdered sugar, three tablespoons unsweetened cocoa powder, and four to six tablespoons milk. Dip the top of the cookie or half of the cookie into the chocolate glaze and sprinkle some toasted coconut. Let them sit for about 30 minutes, then enjoy!
