Using a teaspoon, drop clumps of the ricotta/pepper mix over the peaches.
Sprinkle prosciutto over the dough and top with a thin layer of mozzarella.
Bake for 15-20 minutes, depending on desired degree of crispiness.
I’m also including a recipe for a delicious blueberry bread pudding. It was graciously provided by Brent from the 1896 O’Malley House in New Orleans. The recipe serves 8-10, if you can restrain yourself.
Blueberry Bread Pudding
7 eggs
1 tsp vanilla extract
1 tsp cinnamon
½ cup sugar
2 ½ cups milk
6-8 croissants
2 ½ cups frozen blueberries (do not defrost)
Topping:
½ cup sugar
1 tsp cinnamon
Orange Brandy Sauce:
½ cup sugar
½ stick butter
Vanilla (to taste)
1 egg
Brandy liqueur (to taste)
For the bread pudding:
Place 1 inch slices of croissants in greased 9x13 inch baking dish. Top with blueberries.
Mix first five ingredients and pour over croissants and blueberries.
Mix topping and sprinkle on top of the croissants. Cover and refrigerate overnight.
Bake at 350 degrees F for 45-55 minutes.
For the orange brandy sauce:
Slowly melt the butter and let stand at room temperature.
In a bowl, mix sugar, egg and vanilla.
Add everything to the cooled butter and whisk over a low temperature flame, making sure the egg doesn’t cook.
Add the liqueur at the end and remove from heat.
