Makes 4-6 sandwiches.
Ingredients
Tuna Paste
12 oz white albacore tuna in water (drained)
3 tbsp guacamole
1 tsp diced jalapeño (or skip if you get spicy guacamole)
6 tbsp garden vegetable cream cheese
1 tbsp sweet relish
2 tbsp chopped pimentos
1 tsp ground mustard
2 tsp honey
1 tsp dried dill weed
Sandwich Fixings
2 slices of bread, any type but sourdough recommended
1/2 tbsp unsalted butter
1/2 tsp fresh grated garlic or 1/4 tsp dried garlic powder
1 slice of cheese, any type but Swiss or cheddar work best
Directions
Combine and blend all the tuna paste ingredients.
Melt butter in medium high skillet
Add garlic and sauté lightly
Place the bread in the skillet and start grilling
Add cheese and a thick layer of tuna paste
Grill until cheese is melted and bread is a golden brown
Serve hot with two spears of kosher dill pickles and vegetable chips, or French fries (if Bruno has done something really good).
