  "I know," I whispered.

  I was about to say something else but that was the moment the opening notes of 'I'll Be There' by the Jackson 5 came over the sound system we'd set up in the yard. Jack looked down at me, his blue eyes bright with love, and reached for my hand.

  "Shall we dance?"

  Grandma Dottie's Famous Mashed Potatoes

  3 lbs. potatoes

  1/2 cabbage, chopped*

  1 large onion*

  2/3 cup light cream

  1/2 cup butter

  salt and pepper

  6 rashers bacon (optional)

  1. Peel and boil the potatoes until cooked through.

  2. Fry the bacon, crumble and set aside. Cook chopped cabbage and onion in bacon fat over medium heat until soft.

  3. Drain and mash the potatoes with the cream, salt and pepper. Add the vegetables and bacon. Be careful not to over-mix or potatoes will become gluey.

  4. Melt the butter, make a well in the mashed potato mix and pout the melted butter into it. Serve immediately.

  *Feel free to make substitutions here – leeks for onions, kale for cabbage, a green onion – colcannon is an infinitely flexible dish!
