  "You'll have to come up with something, gal," Josephine murmured. "And we'll serve them to celebrate the reopening of the café."

  Heather's lips curved up.

  Was this the first sign of Josephine agreeing to her new vision for the business?

  "And I'll be happy to test them for you, but only when I’m off duty," James added.

  Recipe: Feijoa and Ginger Scones

  Remember those mouth-watering, unpronounceable scones Josephine baked to welcome Heather to the café, Dolphin Cove and New Zealand?

  Here is a recipe, adapted from Foodlove.co.nz.

  Feijoas grow abundantly in New Zealand, but you can also find them in other countries (subtropical). The fruit is the size and shape of an egg, has thick, green skin, which is edible, but usually we eat just the soft, sweet-and-tangy flesh, scooped. I love this little gritty bits!

  Feijoas are my second favourite fruit (after strawberries).

  If you can’t find fresh fruit, try jam. You may need to reduce the amount of sugar in this case.

  Speaking of substitutions: you can use lemonade instead of buttermilk (I prefer buttermilk).

  By the way, I always reduce the amount of sugar in New Zealand recipes, they tend to be too sweet for my taste. And, it’s easier to add sugar, even if it’s icing, but once it’s too much, you can’t undo it :)

  FEIJOA & GINGER SCONES

  Ingredients

  •2 cups self-raising flour

  •1 1/2 teaspoon ground ginger

  •1 teaspoon baking powder

  •1/4 cup sugar

  •50 gram butter

  •3/4 cup buttermilk (or lemonade)

  ▪1 cup chopped or scooped feijoas flesh (or the same amount of feijoa jam, but consider reducing the amount of sugar in this case)

  Instructions

  Preheat oven to 210°C (410F).

  Mix dry ingredients to combine.

  Rub butter into fine crumbs

  Add feijoas/feijoa jam and buttermilk/lemonade to the dry mix. Stir to combine.

  Knead just enough to bring dough into a ball.

  Roll on a floured board to 1.5cm thick. Cut into rounds; place on a cold, floured tray.

  Bake for 15-20 minutes until cooked.

  Enjoy with whipped cream or feijoa jam, or both :)
