  Mix butter, brown sugar, corn syrup, vanilla, orange juice concentrate, and orange zest in a sauce pan and bring to a boil on medium heat. Remove pan from heat and slowly whisk in your flour mixture until completely combined. Add in reserved toasted almonds.

  Using a spoon, drop a 1 ½ inch wide spoonfuls of mixture onto the parchment lined cookie sheets. Space them 2 inches apart (fitting 8-10 cookies on each pan). Bake for 7-9 minutes (turning the cookie sheet to brown cookies evenly) until edges of cookies are golden brown. Let cool and enjoy!

  Granny’s Butterballs

  1 ½ cups butter (Granny uses unsalted)

  ¼ tspn salt

  ¾ cup powdered sugar (½ cup extra to roll cookies in)

  1 ½ cups ground pecans, almonds, or walnuts (Granny uses all three)

  1 tspn almond extract

  4 tspns vanilla extract

  3 cups flour

  ~Preheat oven to 325 degrees. Cream butter with salt and powdered sugar. Beat with mixer until texture is fluffy. Add almond and vanilla extracts to mixture. Grind nuts using a food processor, or blender, or magic bullet. Add nuts to mixture. Add flour and mix well. Roll mixture into small balls and arrange on ungreased cookie sheets. Bake for 12 to 15 minutes. Roll balls in extra sugar when warm. Roll balls in more sugar after they cool. Enjoy!

  Granny Chip Delight

  1 cup chocolate chips

  1 cup white chocolate chips

  1 cup peanut butter chips (or whatever flavor chips you want)

  1 can of Chinese noodles

  1 jar of peanuts or nuts of your choice. Coconut is also delish. (Granny uses unsalted or omit if you have an allergy)

  ~Melt chips double-boiler style. Add the rest of the ingredients and mix well. Drop teaspoonfuls onto wax paper and let cool. Enjoy!

  Gran’s Viennese Iced Coffee

  6 (1 ounce) shots of decaf or regular espresso

  3 tbsp sugar

  1 tspn pure vanilla extract

  ¼ cup of hot water

  2 cups of ice

  4 yummy scoops of vanilla or coffee flavored ice cream or frozen yogurt

  Unsweetened cocoa powder

  Combine the espresso, sugar, vanilla and hot water in a blender and mix until the sugar dissolves. Add ice and mix on high until mixture is smooth. Divide up in 4-6 short glasses.

  Place ice cream or frozen yogurt into microwave for 15 seconds (until soft, not melted). Add one scoop of ice cream or frozen yogurt to each glass and then sprinkle with cocoa powder. Serve with a straw or spoon and enjoy!

  Apple Pie Ala Gran

  Golden Brown Foolproof Crust:

  1 cup shortening (Granny likes butter flavored Crisco)

  2 cups flour

  1 tspn salt

  1 tbspn vinegar

  1/3 cup milk

  ~Preheat oven to 450 degrees. Mix flour with salt. Cut shortening into flour mixture. Pour vinegar into milk to make sour milk. Combine sour milk with flour mixture. Add a bit more flour to need into a ball. Cut into 2 balls (one for the bottom crust and one for the top). 1 pie = 2 crusts. Roll out bottom crust and press into pie pan.

  Apple Pie Filling:

  3 cups heaping apples (Granny likes Macintosh, sliced super thin)

  1 cup sugar

  1 tspn cinnamon

  ¼ tspn nutmeg

  2 tbspns flour

  1 tbspn butter (can use unsalted, but Granny uses salted butter for her pies)

  ~Place apples in a bowl. In a separate bowl combine sugar, flour, cinnamon, and nutmeg. Mix well and then pour over apple mixture. Pour pie filling into bottom crust. Break up butter and place on top of pie filling. Roll out top crust and place on top of pie, sealing the edges with a fork. Make slits in top of crust. Brush milk generously all over the top of crust. Bake on 450 degrees for 10 minutes, then lower temperature to 350 degrees and bake for another 50 minutes. Enjoy with vanilla ice cream or sharp cheddar cheese!

  Granny’s Banana Cakes

  3 large bananas

  ¾ cup sugar

  1 egg

  ½ tspn salt

  1 tspn baking soda

  1 tspn baking powder

  1 ½ cup flour

  ½ cup oil

  1 cup mini chocolate chips

  ~Preheat oven to 375 degrees. Mash the bananas, mix in the sugar, followed by the egg (slightly beaten), then the salt, soda, and powder. Next mix in the flour, stir in the oil, and stir in the chocolate chips. Nuts are also delish if desired. Bake for 20 minutes and enjoy!
