ICED COFFEES
What do you drink when you’ve had enough hot coffee for the day…when soft drinks seem flat, and when you want a refreshing pick-me-up? I’d suggest an iced coffee. Iced coffee has caffeine for a pick-up (or iced coffee may be prepared with decaffeinated coffee). In addition, these iced coffees have other wonderful ingredients…nutritious banana shakes, delicious coffee coolers with ice creams, and refreshing iced coffees with fruit mixtures.
during hot weather, iced coffee also provides a cooling morning breakfast drink. But, no matter what the weather, I’m sure you’ll find that these iced coffee recipes will please coffee lovers. As a matter of fact, some of my non-coffee-drinking friends appreciate the flavors of these iced coffee recipes!
make sure you brew strong coffee for these recipes. Better still, use one-ounce Hot Coffee Concentrate (page 102) or Cold Coffee Concentrate (page 103) and seven ounces water for each cup of coffee required by these recipes.

1 cup freshly brewed, Amaretto coffee (regular or decaffeinated)
1 cup milk, 2% milk fat
½ teaspoon pure vanilla extract
1/3 teaspoon almond extract

Combine sugar and cold coffee. Add slowly, continuing to beat. Turn to low speed. Add ice cream, about one-quarter of it at time, beating after each addition until blended. Pour into four, ten-ounce stemmed glasses. Serve with sipping straws.

This iced coffee is a summertime favorite at Green Mountain Coffee Roasters in Waterbury, Vermont. They sell lots of tall glasses of this cooling confection!

COMBINE coffee, milk, rum flavoring, and simple syrup. Chill. Place one-half cup cracked ice in each of six tall glasses. Pour in coffee mixture. Top with sparkling water.
1* TO MAKE simple syrup: simmer one-half cup sugar with one-half cup water for five minutes, until all sugar is dissolved. Cool. Store in a covered jar in the refrigerator. Simple syrup will keep indefinitely. It is a great sweetener for coffee drinks.

IN a saucepan, blend cardamom seeds and water. Bring to a boil and boil for five minutes. Cool water for one hour in refrigerator. Strain water into the water reservoir of coffee maker and brew ground coffee according to manufacturer’s direction. Fill six tall, tenounce, heat-resistant glasses full of ice.
