  In her distinctive handwriting, Nell had written a single sentence: “My brother Robert Boudreaux’s daughters (Ezra’s half sisters) with Sophie on Adoption Day.”

  Ezra Landry’s Better-Than-Calvin’s Apple Pie

  1 large egg yolk, beaten

  1/4 teaspoon salt

  1/2 teaspoon ground cinnamon

  1/4 teaspoon ground nutmeg

  3/4 cup plus 3 tablespoons all-purpose flour

  5-1/2 cups peeled, sliced cooking apples

  1 tablespoon lemon juice

  3/4 cup sugar, separated into 1/2 cup and 1/4 cup

  1/2 cup brown sugar

  1/3 cup butter at room temperature

  1 pie crust, unbaked

  Preheat oven to 375 F. Brush bottom and sides of crust evenly with egg yolk. Bake on baking sheet about 5 minutes, until brown. Remove crust from oven. Combine sliced apples, lemon juice, 1/2 cup sugar, 1/4 cup brown sugar, 3 tablespoons flour, salt, cinnamon, and nutmeg. Mix well, then spoon into prepared crust. Mix remaining ingredients with a fork until crumbly and sprinkle over top of filling. Bake on baking sheet until topping is golden and filling is bubbling, approximately 50 minutes. Cool thoroughly, at least 4 hours, before serving. Serves 8.
