¾ cup Icing Sugar

  ½ cup Ground Almonds

  1-2/3 cup All-Purpose Flour

  ½ block salted Butter, softened

  1 Egg

  Directions:-

  Beat butter, sugar and ground almond in an electric mixer until well combined.

  Stir in the egg and beat until creamy and lump-free.

  Gradually add the flour and beat about 30 seconds more until a dough forms.

  Shape the dough into a ball and flatten to form a disc. Cover with clingwrap and pop into the fridge to chill for 1 hour.

  When you are ready to bake the tart shells, start by lightly greasing 4-inch individual tart pans.

  Divide the dough into 8 equal portions and roll into balls.

  Roll out each ball of dough and place onto the greased tart pans, trimming off any excess dough.

  Pop the pans into the fridge to chill for another 1 hour.

  Have the oven pre-heated to 350 degrees.

  Fork a few holes into the bottom of the tart dough and fill with dried beans.

  Bake for 15 minutes.

  1¼ cups All-Purpose Flour

  2 tablespoons Cold Water

  Directions:-

  Combine sugar and flour together in a food processor and pulse 4-5 times until mix. Pop the butter cubes in one piece at a time and pulse after each addition to get a mixture that is coarse.

  Whisk egg yolk, vanilla and water together in a spouted container.

  With the food processor on the low speed, gradually pour in the egg mixture until the dough forms.

  Wrap with dough with a piece of clingwrap and pop into the fridge to chill until ready to use.

  1 cup Hazelnuts

  Rough Puff Pastry

  A standard recipe for flaky and rustic puff pastry. Whip up a large batch of this and keep in the freezer for use anytime you want.

  Yields 24.6oz Puff Pastry

  Ingredients:-

  14oz Plain Flour

  2¼oz Butter, chilled

  5¾oz Butter, frozen

  ¼ teaspoon Salt

  Directions:-

  Combine flour and salt in a mixing bowl.

  Using your fingertips, press the chilled butter into the dry ingredients.

  Add cold water, 1 tablespoon at a time, into the mixture until a dough forms.

  Roll out the dough into a rectangular shape and grate frozen butter over the top of the bottom half of the dough.

  Fold down the top half of the dough and rotate the dough by 90 degrees. Roll dough out again.

  Grate the frozen butter over the bottom 2/3 of dough and fold down the top 1/3 portion, and fold up the bottom 1/3 portion. Turn 90 degrees and roll out.

  Cover dough with a piece of clingwrap and pop into the fridge to chill for at least 30 minutes before using.

  APPLE PIE RECIPES

  Traditional Apple Pie

  A picture-perfect classic apple pie with a beautiful lattice crust.

  Serves 6-8

  1 hour 30 minutes

  Ingredients:-

  1 Pie Crust

  6-8 Granny Smith Apples, core removed and sliced

  ½ cup Brown Sugar

  ½ cup White Sugar

  ¼ cup Water

  ½ cup Butter

  3 tablespoons Flour

  1 teaspoon Vanilla

  1 teaspoon ground Cinnamon

  ¼ teaspoon ground Nutmeg

  Directions:-

  Start by pre-heating the oven to 350 degrees.

  In a medium saucepan, melt butter and pour in flour, stir well to form a paste.

  Pour in water, both types of sugar, cinnamon, nutmeg and vanilla, and let the mixture come to a boil.

  Then, reduce the heat and let the mixture simmer for about 5-10 minutes, stirring all the time.

  Assemble the pie crust in a lightly greased pie plate.

  Layer the sliced apples and cover with lattice work crust.

  Slowly pour the hot sugar and butter mixture evenly over the crust and let it drip through onto the sliced apples.

  Reserve a little of the mixture and using a pastry brush, brush the mixture over the crust.

  Bake for 1 hour.

  Maple Syrup Apple Pie

  This recipe for apple pie involves baking the apples first before filling a pie crust with it so as to ensure that the amount of apples that you fit into the pie does not decrease due to shrinkage while baking inside the crust. Because you can be sure of adequate apples in the pie, no thickener is required and the full flavor of the apples come true perfectly.

  Serves 6-8

  Ingredients:-

  1 Pie Crust

  1 Egg

  4 pounds Cortland Apples, skin removed, core removed and cut into thick slices

  2 tablespoons All-Purpose Flour

  ¾ cup Maple Syrup

  ½ cup Maple Sugar

  Directions:-

  Start by pre-heating the oven to 350 degrees and line 2 baking trays with parchment paper, set aside.

  Toss the apples with maple syrup to evenly coat each slice and layer the apple slices onto the baking trays.

  Bake for 45 minutes.

  At the end of the baking time,
remove apples from oven and let chill before coating with flour and maple sugar.

  Roll out the pie crust, transfer to a pie plate and fill with the apple filling. Cover with the crust pattern of your preference.

  Whisk the egg and brush over the pie pastry.

  Pop the pie into the freezer for 45 minutes before baking on the lowest rack of the oven for 30 minutes at 400degrees, and another 350 degrees after.

  Dutch Apple Pie

  Ingredients:-

  1 Pie Crust

  For the Filling:

  8 cups Apples, core removed and sliced thin

  ¼ cup All-Purpose Flour

  ½ cup Sugar

  1 tablespoon Lemon Juice

  ¼ teaspoon ground Cinnamon

  For the Topping:

  1 cup All-Purpose Flour

  2/3 cup Brown Sugar

  ½ cup unsalted Butter, softened

  1 tablespoon Sugar

  Directions:-

  Start by having the oven pre-heated to 400 degrees.

  In a medium bowl, mix the ingredients for the filling together until thoroughly combined.

  Roll out the pie crust and transfer onto the pie plate.

  Pour the filling onto the rolled out pie crust, set aside.

  Prepare the topping by using your fingers to press together butter, flour and brown sugar. Crumble this mixture over the pie, and drizzle sugar after.

  Bake the pie for 45-55 minutes.

  Apple Caramel Cobbler

  Flavorful apples mixed with a touch of cinnamon and warm caramel come together to give you a yummy mouth-watering dessert.

  Ingredients:-

  6 Apples, core removed and cut into slices

  2 tablespoons Sugar

  1 teaspoon ground Cinnamon

  For Cobbler Dough:

  1 cup All-Purpose Flour

  1 cup Sugar

  ½ cup Butter, melted

  1 cup Milk

  2 teaspoons Baking Powder

  2 teaspoons Vanilla Extract

  ¼ teaspoon Salt

  For Caramel Sauce:

  1 cup Brown Sugar

  ½ cup Butter, unsalted

  ¼ cup Heavy Cream

  Directions:-

  Pre-heat your oven to 400 degrees.

  Grease a 9x13 baking dish with melted butter.

  In a large saucepan, heat up apple slices, ground cinnamon and sugar, stirring all the time.

  When the apples are soft, after about 10 minutes, turn the heat off.

  In a separate saucepan, stir together brown sugar, butter, and heavy cream to cook the caramel sauce. When the mixture has started to boil, reduce the heat to let simmer and cook for another minute.

  Make the cobbler dough by whisking together sugar, flour, baking powder, milk, vanilla extract and salt.

  Slowly pour this mixture into the baking dish, set aside.

  Mix together 1 cup of caramel sauce and apple mixture, and transfer this apple and caramel mixture over the batter in the baking dish.

  Bake for 20-25 minutes.

  To serve, drizzle the reserved caramel sauce over.

  Chai Apple Pie

  Spiced up apple pie that is wonderfully aromatic with all the fragrances of a classic chai tea blend. What could be better?

  Serves 6

  1 hour 20 minutes

  Ingredients:-

  1 Pie Crust

  8 cups Apples, cut into very thin slices

  2 tablespoons Heavy Cream

  ½ cup + 2 teaspoons Sugar

  ¼ cup Tapioca Starch

  1/3 cup Butter, cut into pieces

  2 teaspoons ground Cinnamon

  1 teaspoon ground Cardamom

  ½ teaspoon ground Nutmeg

  ¼ teaspoon ground Cloves

  ¼ teaspoon ground Coriander

  ¼ teaspoon ground Ginger

  Pinch of ground Black Pepper

  Directions:-

  Start by pre-heating oven to 375 degrees.

  Prepare the pie crust by rolling it out and placing it onto a pie plate.

  Throw in the sliced apples together with sugar and tapioca starch.

  Transfer the apple mixture onto the pie crust and spoon the cut pieces of butter all over the mixture. Cover the pie with more pie crust and crimp the sides.

  With a pastry brush, brush the heavy cream over the top of the pie and then drizzle sugar over.

  Bake for 60 minutes.

  Apple Crumble Pie

  Is it a pie or a crumble?

  This amazing marriage of the two makes for an amazingly flavorful fusion – the Apple Crumble-Pie. Serves 6-8

  6 hours 50 minutes

  Ingredients:-

  1 Pie Crust

  5 Apples, core removed and sliced thin (use a mix of red apples and Granny Smith apples)

  100g Sugar

  ¼ cup All-Purpose Flour

  1 teaspoon Vanilla Extract

  ¼ teaspoon ground Cloves

  ¼ teaspoon ground Nutmeg

  1 teaspoon + ½ teaspoon ground Cinnamon

  For the Topping:

  ¾ cup All-Purpose Flour

  ¾ cup Walnuts, chopped

  1/3 cup Butter, unsalted and melted slightly

  100g Brown Sugar

  1 teaspoon ground Cinnamon

  Directions:-

  Pre-heat the oven to 400 degrees.

  In a mixing bowl, combine all the ingredients for the pie filling and stir to mix well, set aside.

  Roll out the pie dough and transfer onto the pie plate.

  Pour the apple filling onto the prepared pie crust. Set aside.

  Prepare the crumble toppings by mixing all ingredients together, cut the butter into pieces and drop it in, rubbing into the dry mixture.

  Sprinkle the topping over the apple filling on the pie and pop into the oven to bake for 20 minutes first, then reduce the temperature down to 375 degrees and bake for another 30 minutes.

  Let the filling thicken up by letting the pie cool down for 6 hours before serving.

  Oatmeal and Nut Apple Pie

  Ingredients:-

  1 Whole Wheat Pie Crust

  3 Granny Smith Apples, core removed and cut into thin slices

  3 red Apples, core removed and cut into thin slices

  2 tablespoons All-Purpose Flour

  ½ cup Light Brown Sugar

  1 tablespoon Lemon Juice

  ½ teaspoon ground Cinnamon

  For the Topping:

  ½ cup Whole Wheat Pastry Flour

  ¼ cup Light Brown Sugar

  1/3 cup Rolled Oats

  ¼ cup Walnuts, roughly chopped

  2 tablespoons unsalted Butter, cold and cut into pieces

  2 tablespoons Orange Juice

  ½ teaspoon ground Cinnamon

  1/8 teaspoon Salt

  Directions:-

  Start by pre-heating the oven to 375 degrees.

>   Roll out the whole wheat pie dough and place onto the pie plate. With a fork, poke holes on the bottom of the crust and pop into the fridge to cool for 15 minutes, after which put it into the oven to bake for 15 minutes.

  Let pie crust cool for 30 minutes.

  While the baked pie crust cools, prepare the filling by mixing all the ingredients together, toss well to combine.

  Pour the filling onto the cooled pie crust and bake for 30 minutes.

  While the pie bakes, mix together flour, brown sugar, rolled oats, cinnamon and salt. Cut the butter into the dry ingredients and rub well into the mixture.

  Pour the orange juice in and stir well, then add the walnuts.

  When the 30 minutes of baking is done, sprinkle the topping over the top of the pie and bake for another 20 minutes.
