  200g of spinach

  230g of short crust pastry

  4 free-range eggs, beaten

  100g of Cheddar cheese, grated

  150g of ricotta cheese

  1tsp of thyme leaves, chopped

  90g of smoked ham batons (or cooked ham, torn)

  Directions:-

  Preheat oven at 190C.

  Place spinach in the colander; pour boiling water over it to wilt. Run it under the cold water and squeeze out the liquid as much as possible using hands.

  Unroll pastry circle; transfer it to the lined baking sheet.

  Beat eggs and ricotta till smooth and add wilted spinach, cheese, ham and thyme. Season it and pour it into center of tart case.

  Fold up pastry’s edges over filling. Brush it with some milk and bake in bottom of oven for about 20 min or till set, slightly puffed up and pastry becomes golden.

  Muffin-Tin Vegetable Crust less Quiches

  These special veggie quiches are much simpler to prepare than we think. These baked snacks are tasty served warm along with any salad at lunch.

  Serves: 12

  Ingredients:-

  1tbsp of vegetable oil

  1 bunch of spring onions, chopped

  2 sticks of celery, chopped finely

  1 red pepper, deseeded and chopped finely

  6 eggs, beaten

  100ml of whole milk

  Salt and black pepper

  150g of Cheddar cheese, grated

  Directions:-

  Pre-heat the oven at 180°C. Lightly grease the muffin tin. Heat oil in a fry pan; gently fry vegetables for about 6-7mins, while stirring, till softened. Divide this mixture among 12 muffin-tin cups.

  Mix together milk and eggs, and season it well. Pour it into all tins to cover vegetables. Sprinkle tops with the grated cheese.

  Stand the muffin-tin on the baking tray; bake it in oven for 15 minutes till light golden and set. Cool it for 10 minutes before removing quiches. Serve them warm along with a crunchy salad or serve cold.

  Emmental, Asparagus and Ham Quiche

  This emmental, asparagus and honey roasted ham quiche has an amazingly sweet flavor and is perfect eaten cold or hot.

  Ingredients:-

  250g of short crust pastry

  100g of Emmental cheese, grated

  100g of asparagus, pre-cooked

  1tbsp of chopped chives

  150g of honey roasted ham, cut into chunks

  200ml of single cream

  3 eggs

  A dash of salt and black pepper

  A dash of Parmesan, grated

  Directions:-

  Preheat oven at 190°C.

  Roll out pastry and line a greased quiche dish. Refrigerate it for 10 minutes and place dried beans in pastry case; bake for about 20 minutes. Remove the pastry case from oven, remove dried beans; leave it cool.

  Sprinkle grated Emmental, chopped ham, chopped chives and asparagus on to pastry base.

  Beat cream and eggs together, season it with pepper and salt and pour it over ingredients.

  Sprinkle with parmesan and bake quiche for about 30 minutes, till firm.

  This Bacon and spinach quiche is delicious and is perfect for breakfast or brunch.

  Ingredients:-

  6 large eggs, beaten

  1 ½ cups of heavy cream

  2 cups of packed fresh baby-spinach, chopped

  1 lb. of bacon, cooked, crumbled

  1 (9-inch) pie crust, refrigerated (fit to 9-inch glass pie plate)

  Directions:-

  Preheat oven at 375 F.

  Combine cream, eggs, pepper, and salt in a blender. Layer bacon, spinach, and cheese at bottom of pie crust and pour egg mixture over top. Bake it for 35-45 minutes till egg mixture sets. Cut it into 8 wedges.

  This is a tasty French Quiche and it has the great combination of mushrooms, spinach, onions, bacon and Cheddar and Swiss cheeses.

  Ingredients:-

  6 slices of bacon

  4 eggs, beaten

  ¼ tsp of ground nutmeg

  1 ½ cups of light cream

  ½ tsp of salt

  ½ tsp of pepper

  2 cups of fresh mushrooms

  2 cups of fresh spinach, chopped

  1/2 cup chopped onions, chopped

  1 cup of Cheddar cheese, shredded

  1 cup of Swiss cheese, shredded

  1 (9 inch) deep dish pie crust

  Directions:-

  Preheat the oven at 400 F.

  Place the bacon in the deep skillet. Cook on medium-high heat till evenly brown. Drain it. Crumble and keep aside.

  In a bowl, whip cream, eggs, nutmeg, pepper, and salt together. Add bacon, spinach, onions, mushrooms, ¾ cup of Cheddar cheese, and ¾ cup Swiss of cheese. Transfer it to pie crust. Top it with remaining cheese.

  Bake it uncovered in oven for 35 minutes, or till bubbly and light brown.

  2 (9-inch) pastry shells

  4 eggs, beaten

  1 tsp of dry mustard

  1 (12 oz.) can of evaporated milk

  1 tsp of salt

  1 dash of cayenne pepper

  1 bunch of green onions, cut into ¼-inch slices

  1 (10 oz.) pkg. of chopped spinach, frozen and thawed

  ½ lb. of Swiss cheese, grated

  ½ lb. of Cheddar cheese, grated

  Directions:-

  In a mixing bowl, whisk eggs with dry mustard, evaporated milk, pepper and salt.

  Heat oven at 350, with rack placed in center.

  Add spinach, grated cheeses and green onions to egg mixture. Stir till well-blended.

  Pour half the mixture in prepared crust. Bake in oven at 350 for 1 hour, or till center of the quiche becomes firm and well-browned.

  2 tbsps. Of butter

  2 cups of spinach leaves, torn

  2 cups of fresh mushrooms, sliced

  6 green onions, chopped

  4 eggs, beaten

  ½ cup of half-and-half

  1 cup of Monterey-Jack cheese, shredded

  Preheat the oven at 375 F.

  Melt the margarine in the skillet on medium heat; cook mushrooms, onions and spinach for 5 about minutes or till tender, stir constantly. Remove it from heat.

  Arrange crescent-roll triangles in one circle in a pie-plate greased using non-stick cooking spray with narrow-tips hung over rim of pie plate 2 inches. Press the dough on bottom and up sides of pie plate for filling in any gaps.

  In a bowl stir soup mix, eggs and half and half cream together. Stir cooked vegetables and cheese into egg mixture till blended. Pour it into prepared crust. Fold points of the dough which are hanging over edge back over filling.

  Ingredients:-

  8 oz. of bacon

  1 (9 inch) 9 inch pie crust, unbaked

  1 cup of Monterey Jack cheese, shredded

  1½ cups of half-and-half

  3 tbsps. Of all-purpose flour

  ½ cup of onion, diced

  1 (4 oz.) can of green chile-peppers, diced, drained

  Directions:-

  Preheat the oven at 350 F. Place the bacon in a deep skillet. Cook on medium-high heat till evenly brown. Drain the bacon, crumble and keep aside.

  Place the crust in a pie-plate. Sprinkle with bacon over inside of the crust. In a bowl, mix Monterey jack cheese, Cheddar cheese and flour. In another bowl, beat eggs, onion, green chiles, and cream together. Add the cheese mixture and stir well. Pour the mixture in pie crust.

  Bake it in oven for about 60-70 minutes, till set. Let it stand for 10 minutes prior to serving.

  2 (12 oz.) pkg. of hash-brown potatoes, frozen

  1/3 cup of butter, melted

  Directions:-

  Preheat the oven at 425 F.

  Squeeze out excess moisture from potatoes; mix them with melted butter in a bowl. Press this into bottom and up sides of ungreased pie pan.

  Bake it at 425 F for about 25 minutes.

  Remove the pan from the oven; arrange cheese and ham evenly over potatoes. In another bowl, beat eggs and cream together. Pour it over cheese and ham.

  Return the pan to the oven; bake it for 425 F for about 30 minutes or till custard is completely set.

  In the blender, combine milk and tofu; process till smooth and add additional milk if needed. Blend in pepper and salt.

  In a bowl, mix spinach, onion, garlic, tofu mixture, Swiss cheese, and Cheddar cheese. Combine well; pour it into the prepared pie-crust.

  Bake it in oven for about 30 minutes or till set and becomes golden brown over top. Let it stand for 5 minutes prior to cutting.

  1 lb. of pork breakfast-sausage, ground

  ½ cup of Parmesan cheese, grated

  1 (9 inch) pie crust, unbaked

  Directions:-

  Preheat the oven at 400 F. Cut the mushrooms into half.

  Crumble sausage in a skillet, add mushrooms; cook over medium-high heat till mushrooms and meat become lightly brown and all liquid from mushrooms is evaporated. Drain off any excess grease. Add parsley.

  In a bowl, beat eggs and add cheese, cream and salt. Pour it into mushroom/sausage mixture and blend well. Pour this mixture into pie shell.

  Bake it in oven for about 25-30 minutes, till crust becomes well brown and filling sets. Let it stand for 10 minutes prior to serving.

  This quiche recipe is a protein-filled, delicious vegetarian meal. It is quite quick.

  Ingredients:-

  1 cup of onion, chopped

  2 tbsps. Of olive oil

  2 cups of water

  ½ cup of dry lentils

  1 cup of fresh tomatoes, chopped

  2 cups of broccoli florets

  1 cup of milk

  4 eggs, beaten

  2 tsp of Italian seasoning

  1 tsp of salt

  Black pepper, to taste

  ½ cup of Cheddar ch
eese, shredded (optional)

  Directions:-

  Preheat oven at 375 F. Place olive oil and onion into a pie plate. Bake it for 15 minutes, or till onion become tender.

  Place water and lentils into a pan; bring to boil. Cook for around 20 minutes, or till lentils become tender. Drain off most of water and place broccoli florets over top of lentils. Cover it and cook 5 minutes. This dries lentils, and cooks broccoli.

  Transfer lentils, tomatoes and broccoli to pie plate along with onions; stir to distribute each item evenly. Add cheese, if using. In a bowl, whisk milk, eggs, Italian seasoning salt, and pepper together. Pour it over ingredients in pie plate.

  Bake it for about 45 minutes in oven, or till center becomes firm when quiche jiggles. Cool it for one or two minutes. Then slice it and serve.
