  1 cup boiling water

  1 cup apricots

  1 cup golden raisins

  Step-by-Step:

  Preheat oven to 325°F, and line a 7-inch metal pan with greased wax paper.

  In a medium pan, melt butter gently over low heat, then remove from heat and add in sugar and molasses until blended. Set aside to cool.

  Sift the flour and dry ingredients together into a medium bowl.

  In a small bowl, beat eggs.

  Add both wet mixtures to the dry mixture and mix until smooth.

  Stir in orange zest and fruit.

  Pour into pan and bake for 60 to 65 minutes until firm to the touch.

  Remove from pan to cool and store in airtight container for at least two days before serving.

  Makes 16 squares.

  Scones

  Properly pronounced “skon” to rhyme with “gone,” legend has it that these tasty Scottish quick bread cakes trace their origin to the Stone of Scone, or Destiny, on which Scottish kings were crowned. Their popularity for tea at Buckingham palace certainly proves they’re fit for royalty.

  Ingredients:

  1 3/4 cups all-purpose flour

  4 tsp baking powder

  5 tbsp unsalted butter

  1/2 cup + 1 tbsp milk

  1/2 cup currants or raisins

  1/4 cup sour cream

  1/4 cup granulated sugar

  1 egg

  1/8 tsp salt

  Step-by-Step:

  Preheat oven to 400°F.

  In a large bowl, sift together flour, baking powder, sugar, and salt.

  Cut in the butter and rub until dough resembles pea-sized crumbs.

  In a small bowl, combine with sour cream, milk, and dried fruit.

  Add to other ingredients and lightly mix until well-blended.

  Wash and dry the small bowl, then add egg and 1 tablespoon of milk. Beat until blended and frothy.

  Liberally flour your hands and, on a floured surface, roll dough out into a 1/2-inch thick square. With a sharp knife, slice the dough into quarters, then slice each quarter into two triangles.

  Place on greased cookie sheet, brush with egg wash, and let rest for 10 minutes.

  Bake for 10-15 minutes until tops are golden brown.

  Cut or break each scone in two. Serve warm with butter, jam, and clotted cream.

  Serves eight.

  Scottish Coffee

  The common wisdom about whiskey (from uisce beatha, the water of life) is that the Irish invented it and the Scots perfected it. Compared to Irish whiskey, Scotch has a smokier, sexier flavor, which lends a different character entirely whether you drink it straight up or add it to your coffee when you need a less guilt-inducing nerve-smoother in the middle of the day.

  Ingredients:

  1/2 oz good Scotch whisky or Drambuie

  1/2 oz Cointreau, Grand Marnier

  1 tsp Demerara (light brown) sugar

  Fresh, dark coffee

  Heavy cream to taste

  Whipped cream

  Step-by-Step:

  Pour hot water into selected glass or cup and let stand 30 seconds.

  Empty and thoroughly dry the cup.

  Fill the cup two within 1 inch of the whiskey or Drambuie and coffee.

  Add sugar and stir until dissolved.

  Deflecting cream along the back of a teaspoon, add it gently so that it drifts across the top of the coffee, sinking no more than one half-inch. Adjust to your liking.

  Top with whipped cream.

  Serves one.
