14.Lay a sheet of plastic wrap on the surface of the curd to prevent a skin from forming, and chill in the refrigerator for at least 1 hour.
To Make the Buttercream:
15.In the bowl of your stand mixer, on low speed, mix together egg whites, powdered sugar, and salt until sugar is fully moistened.
16.Turn off the mixer and scrape down the sides.
17.On the medium speed of the mixer, beat the mixture for another 5 minutes.
18.Reduce the mixer speed to medium-low.
19.Add the softened butter 1 tablespoon at a time. Allow each chunk of butter to be fully incorporated before you add another.
20.Mix in the vanilla extract.
21.Scrape down the sides of the mixer again.
22.Return the mixer to medium speed and beat the icing for 10 more minutes.
To Assemble Cupcakes:
23.Cut a small hole out of the center of each cupcake.
24.Fill the hole with 1 teaspoon of lemon curd.
25.Pipe the buttercream onto the top of the cupcakes.
Makes 12-16 cupcakes.
TRADITIONAL MERINGUE OPTION
3 eggs whites
1/2 cup granulated sugar
1. In a medium bowl, beat the egg whites until they begin to gain volume.
2. Slowly add in sugar while continuing to beat.
3. Whip until stiff peaks form.
4. Pile the meringue onto the cupcakes. Use the back of a spoon to create peaks.
5. Toast the meringue with a culinary torch.
