Finnish pancakes (Pannukakku) are easy on the cook since they are baked in the oven as one great big pancake and cut into serving sizes. Try them with strawberries and whipped cream or maple syrup. You can also add 2 or 3 chopped apples and a dash of cinnamon to the batter right before pouring into the baking pan.

  Serves 4

  2 cups milk

  4 eggs

  1/2 cup flour

  2 tablespoons sugar

  1/2 teaspoon salt

  4 tablespoons butter, melted

  Preheat oven to 450 degrees. Pour melted butter in 8 x 8 inch pan. In a separate bowl mix milk and eggs with beaters. Add flour, sugar, and salt, and beat lightly. Pour into pan. Bake for 20 minutes or until golden brown. Cut and serve.
