  Pickled Banana Peppers

  2 cups white vinegar

  2/3 cup sugar

  1 pound banana peppers, sliced into rings

  6 (8 ounce) jelly jars

  In a medium saucepan over low heat, bring the vinegar and sugar to a boil. Simmer for 3-5 minutes until the sugar has dissolved. Add the banana peppers to jelly jars and pour pickling mixture over them, leaving 1/2-inch headspace. Cover and refrigerate for at least a week before serving.

  Strawberry Lemonade Cupcakes

  1 package yellow cake mix

  1/2 cup oil 2 eggs

  1 (3 ounce) package lemon Jell-O

  1 cup orange juice

  1 stick butter

  1 (8 ounce) package cream cheese

  1/2 cup diced strawberries

  3 cups powdered sugar

  Preheat oven to 350 degrees. In a large bowl, mix together the cake mix, oil, eggs, Jell-O and orange juice using a hand mixer. Pour the batter into 12 lined cupcake tins. Bake for 20 minutes or until a wooden stick comes out clean. While the cupcakes are baking, mix together the butter and cream cheese until fluffy. Add in the powdered sugar and mix until blended together. Stir in the strawberries. Remove the cupcakes from the oven and allow to cool completely. Top each cupcake with the icing using a piping bag or knife.

  Pomegranate Champagne Cocktail

  1 ounce pomegranate juice

  3 ounces champagne

  Sprigs of rosemary

  Pomegranate seeds

  In a champagne flute, add the pomegranate juice, then top with champagne. Garnish with a sprig of rosemary and 2-3 pomegranate seeds.
